Under the direction of the Assistant Food and Beverage Director and Director of Food and Beverage, be responsible for the successful operation of the Italian Restaurant in accordance with established operational and guest service standards of excellence. Motivate and direct staff in all aspects of performance and ensure adherence to standards. Ensure financial profitability and returns to the Seminole Coconut Creek Casino. Provide project leadership and project management as assigned. Act immediately on all guest complaints to ensure that a correction is made wherever possible. Institute cost control procedures, inventories and standards of performance. Review purchase orders and inventory levels as needed. Develop drink, wine, and specialty menus in conjunction with the chef to remain on the cutting edge of industry trends and standards. Ensure that the restaurant supports the casino by providing outstanding service to VIP guests in the restaurant and during special events. Identify and define business needs and implement solutions which result in beneficial changes in the operation of the restaurant, improvement in guest interaction, or cost control. Work in conjunction with the chef and direct the development and administration of controls for all phases of the restaurant in an economical and profitable manner while maintaining established standards. Spearhead menu item changes based on product mix reviews and guest feedback and interaction. Provide guidance to ensure responsible gaming and responsible alcohol service in coordination with management and staff. Demonstrate a personal commitment to ensuring responsible alcohol service through training and compliance. Protect, promote and perpetuate the Company’s brand through policies, procedures, actions and communications. Participate in tribal programs and mentorship to encourage development for property leadership roles. Qualifications
Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida policies and procedures. Demonstrate a commitment to responsible gaming and responsible alcohol service by discreetly notifying appropriate management of concerns. Demonstrate actions and behaviors that reinforce the Company’s Mission and Values: Communication, Integrity, Fun, Respect, Accountability, Passion and Dedication. Ensure prompt and discrete notification to management and/or the Ethics Hotline of any observation of illegal acts or internal ethics violations. Identify and define business needs and implement solutions to improve operations, guest experience, and cost management. Work with the chef to develop and administer controls for all restaurant phases in an economical and profitable manner. Incorporate guest feedback to guide menu and service improvements. Education And/or Experience
College degree and/or three years of progressive restaurant management experience. A combination of education and experience will be considered. Must have strong knowledge of financial information. Proficient in Excel, Word, and PowerPoint. POS, MMS, or other systems are strongly preferred. Physical Demands
Bending, lifting over 20 pounds, standing for several hours at a time. Work Environment
