The Food Service Manager is responsible for planning, directing, preparation and service of all food service activities. Work involves the application of dietetic principles in the planning of menus and preparation of food that complies with the national school nutritional standards. Work also includes determining inventory needs for ordering, daily production planning, and serving meals. The Food Service Manager must ensure compliance with local, state, and federal food safety requirements.
Responsibilities
Direct the preparation, cooking, and service of meals.
Plan menus for breakfast and lunch in accordance with the National school breakfast and lunch program standards.
Plan menus for dinner in accordance with USDA nutritional standards.
Ensure all DESE Food Service requirements are met for all areas of service on campus assigned to the food service department. All documentation will be maintained and prepared for any audits, health department inspections and DESE Food Nutrition Specialists as requested.
Schedule food service staff to ensure adequate coverage during meal preparation and serving times. Ensures accuracy of staff time cards and submits payroll documentation as directed.
Ensure compliance with food safety requirements and the safety conditions in kitchens, dining rooms, and other food preparation/storage areas. Maintains documentation of safety checks, logs, and inspections.
Order adequate quantities of food and supplies for preparation of meals sufficiently in advance of needs by determining working inventory levels.
Ensure the sanitation and cleanliness of the kitchen and serving areas at all times.
Comply with DESE Food Services data collection and reporting requirements by the required due dates. Prepare and maintain all other required local, state, and federal food service reports.
Assist with free and reduced meal determinations.
Ensure food orders comply with state procurement rules and regulations (i.e. state contractors, bidding, etc).
Prepare meals for student trips and off‑campus activities as requested.
Order snacks for dormitories, student breaks, and home‑going transportation.
Coordinate with storeroom personnel and participates in long‑range planning for food ordering, storage, and supplies.
Manage staff in accordance with policies and procedures and ensures compliance with required training by DESE and USDA/NSLP.
Assist the Director in the budget preparation and tracking of food expenditures.
Comply with Food Service Manager annual training requirements.
Physical Requirements
Ability to work long hours while standing and under conditions of high and low temperatures.
Lifting heavy pots and pans.
Other Requirements
ServSafe Certification preferred.
Immunizations as required by local authority.
Computer Skills
Microsoft Office Programs – Word, Excel, and Outlook.
Experience in NutriKids program preferred.
Required Travel This position requires minimal in‑state travel for professional development and/or required meetings.
Associate degree from an accredited college or university with a major in food and nutrition, food service management, dietetics, family and consumer sciences, nutrition education, culinary arts or business. Bachelor’s Degree preferred.
Three years of relevant experience in school nutrition program.
One year of relevant experience in supervising/managing staff.
