Primary Purpose:
To provide a healthy atmoshere in cafeterias district wide by providing efficient Child Nutrition services. The Assistant Director of Child Nutrition and Catering Department is responsible for planning, coordinating and providing leadership of the Child Nutrition Program and Catering Department. Supervising the implementation of child nutrition dietary guidelines as directed by Texas Department of Augmentation (TDA) and federal regulations and assisting in ensuring that the Child Nutrition programs meet regulatory and nutritional requirements for students, promoting the development of sound nutritional practices and maintaining a safe and sanitary environment. Direct and supervise the Southside ISD Catering Department.
Education/Certification
Bachelor’s Degree preferred
Must maintain required Texas Department of Agriculture yearly training standards of 12 hours.
Candidate must have a satisfactory outcome of fingerprinting background check. Nonrefundable fee (approximately $50.00) paid by the employee.
Food Manager Certification

Must understand the National School Lunch Program (NSLP), Texas Department of Agriculture (TDA) and United States Department of Agriculture (USDA) regulations and apply requirements to the operation of the Child Nutrition program

Must be able to take management responsibilities assigned and work independently to ensure productivity

Computer knowledge applications necessary to perform job responsibilities
Assist with the coordination of special events and catering
Oversee compliance with Hazard Analysis Critical Control Points (HACCP) guidelines
Knowledge of menu planning, food purchasing, and preparation of foods
Skilled in recipe standardization, development and testing for quality food products
Experience
Five years’ experience in Child Nutrition environment
Three years’ experience in Child Nutrition management
Major Responsibilities and Duties Child Nutrition Operations
Monitor the National School Lunch Programs and School Breakfast Programs following USDA.
Issue standardized recipes and coordinate input of data to provide nutrient analysis of menus.
Select menu and a la carte items; works closely with vendors to identify the best quality; most cost effective and regulation compliant food items.
Develop, maintain Smart Snacks up to date following TDA requirements.
Develop, maintains and distributes food production records for all menus.
Maintain and organize menu planning software (food production records/inventory)
Routinely visit school cafeterias to evaluate products, recipes and students acceptability of menu items.
Remain current and implement new child nutrition guidelines and meal patterns as directed by TDA and federal regulations; trains department staff and monitors implementation of these regulations.
Test and evaluate all food products to be considered for purchases; coordinates students taste tests.
Work with Student Health Services on the preparation of special diets.
Keep and update special diets for students of the Southside ISD.
Oversee and maintain the Districts commodity program.
Interface with campus administration to facilitate resolution of concerns in an effective and mutually agreed upon manner.
Assist in staff development, campus promotions, student committees, and training coordination.
Assist the Director with all activities that lead to the successful development and implementation of the Child Nutrition program goals.
Manage new initiatives at the campus level and troubleshoot any concerns.
Coordinate the creation and development of major department wide projects.
Direct and supervise the Catering Department and its staff
Perform other duties assigned.
Policy, Reports, and Law
Ensure compliance with federal, state and local standards for safety and related regulations.
Maintain file and present all physical and computerized reports, records and other documents as required. Prepare, process, and maintain all documents required to verify campus kitchen areas meet health code and sanitation standards.
Comply with federal and state law, State Board of Education rule, and board policy in Child Nutrition area.
Budget and Inventory
Oversee preparation of food and all other bids with specifications for Purchasing Department and monitors pricing from all vendors to assure bid prices are met.
Work with Texas20 Purchasing C0-Op to ensure all purchases are in compliance.
Coordinate the purchase of child nutrition items, in accordance with budgetary limitations and district policies.
Recommend disposal of obsolete equipment and replace equipment as necessary.
Assist the Child Nutrition Director to plan and direct inventory and stock control program for equipment and supplies.
Assist the Child Nutrition Director to prepare, review, and revise job descriptions in Child Nutrition department.
Assist the Child Nutrition Director to develop training options and improvement plans to ensure exemplary operation in the Child Nutrition area.
Assist the Child Nutrition Director to evaluate job performance of employees to ensure effectiveness.
Personnel Management
Promote a positive work environment and good morale.
Ensure that personnel practices are coordinated and personnel files are maintained according to district policy.
Provide assistance and guidance in personnel hiring procedures and monitors effectiveness of processing application and status of employee placement.
Safety
Ensure safety standards conform to state, federal, and insurance regulations and followed.
Organize and conducts training programs to promote a safe work environment (HACCP).
May assists with investigating kitchen accidents.
Assist the Child Nutrition Director to ensure that measures are in place and operating to protect food, supplies, and equipment in school cafeterias, lunchrooms, and warehouses.
Ensure that child nutrition equipment is in excellent operating condition.

Attend professional growth activities to keep abreast of innovative techniques for Child Nutrition operations.
Promote a positive image that supports the mission of the district, works with all Child Nutrition personnel to continuously improve the professionalism of the Department.

Assist the Child Nutrition Director to supervise and evaluate performance of cafeteria managers and support staff assigned to the area of Child Nutrition.
