Desert Mountain Club features seven signature golf courses, and seven distinctive clubhouses each with its own unique restaurant plus banquets, state-of-the-art fitness center, swim and tennis facility, and spa. In this role, you will be responsible for assisting the Pastry Chef with daily production in all aspects of the bakery department including inventory, cost analysis, and quality standards. To co-create signature items showcasing each of our clubhouses individuality. A Pastry Cook I will assist in the creation of Desert Mountains standard pastry recipes to ensure consistency. The ideal candidate will be a team player with a great attitude and strong work ethic. Two or more years experience as a pastry cook and baker are required. Job Details Responsibilities: Responsible for startup of kitchen equipment Responsible for organization and production of daily pastry orders, special requests, and production Prepare all plated desserts, chocolates, confections, entremets, frozen desserts, glazes, pies, cakes, and other bakery items in accordance with established recipe and presentation standards. Daily baking of breakfast and other breads for each restaurant Dessert pars and garnishes Specialty cakes and pies Consulting with Pastry Chef in the planning of desserts for large functions Responsible for quality inspection, proper breakdown, and storage of products Monitoring equipment and ensuring all specialized pastry baking tools are in working order Maintaining the good running order of specialized pastry baking equipment Responsible for the overall cleanliness of bakery area Monthly inventory Pastry Orders/FoodTrack, costing, and financials BEO Tracking Co-create new, innovative, and exciting seasonal desserts to enhance menus and engage members Executing pastry orders for catered events and accommodating special requests Provide excellent recipes Other duties as assigned by management Physical Requirements & Working Conditions: Required to stand and walk Regularly Required to lift and/or move up to 50 pounds Frequently Required to push and/or pull 90+ pounds and lift to 90 pounds with assistance Occasionally Exposed to extreme cold (non-weather) and extreme heat (non-weather) Regularly Required to work, days, nights, weekends, and holidays Required to stand for long periods of time Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.
