as the Chef de Cuisine for Volario’s, overseeing all culinary operations within the restaurant and ensuring excellence in Italian cuisine, consistency in quality, and a smooth, efficient kitchen environment.

Essential Duties and Responsibilities

Lead daily kitchen operations, including supervision of line cooks, prep cooks, and other back‑of‑house staff.

Ensure all dishes reflect authentic Italian techniques, flavor profiles, and presentation standards.

Develop and execute daily specials that align with Volario’s seasonal Italian menu and overall concept.

Collaborate with the Executive Chef and other culinary leaders on menu development, including recipes, descriptions, and staff training materials.

Maintain all SOPs, hiring, onboarding, and ongoing training for the kitchen team.

Oversee all aspects of food production—from preparation to plating—to ensure quality, taste, and consistency.

Manage and maintain kitchen organization, including cleanliness, labeling, storage, and compliance with health and safety codes.

Implement effective inventory control practices.

Ensure accurate bi‑weekly payroll submission and schedule alignment with business needs.

Work directly with the Events Manager on Banquet Event Orders (BEOs) when Volario’s supports special events.

Lead by example—mentor, motivate, and develop staff to achieve excellence and career growth.

Conduct performance evaluations and support staff development.

Step in for the Executive Chef as needed.

Qualifications

Minimum 5 years of experience as a professional chef in a high‑end or fine‑dining restaurant. Italian cooking preferred.

Culinary degree or equivalent professional experience preferred.

Deep knowledge of regional Italian dishes including pasta, risotto, seafood, and pizza; mastery of traditional cooking methods and ingredient sourcing.

Valid Food Safety and Sanitation certifications required.

2+ years of supervisory experience leading a culinary team in a full‑service kitchen or hotel setting.

Proven experience managing budgets, food and labor costs, and P&L reports.

Excellent organization, time management, and communication skills.

Strong teamwork and collaboration abilities.

Commitment to quality, cleanliness, and continuous improvement.

Ability to stay calm under pressure and adapt to dynamic service environments.

Physical ability to lift up to 75 pounds, stand, and walk for extended periods, and perform general kitchen and cleaning duties as needed.

Compensation $60,000 – $75,000/yr

Competitive pay commensurate with education and experience.

Due to the nature of our 24‑hour operation, there is no guaranteed work schedule. Managers will try to accommodate specific schedule requests, but they are never guaranteed if business volume prohibits.
