EXECUTIVE CHEF

on the campus of the

University of Houston . This leadership position is responsible for the successful operation of the Moody Towers Dining Commons culinary and kitchen team. Moody Towers is a 3-star Certified Green Restaurant® with 33,000 square feet and ten dining stations, open six days a week. The role includes menu development, supervision of budgeting and food costing, client and customer satisfaction, and staff training and growth. This is a growth-focused opportunity with potential for advancement within Chartwells Higher Education.

Base pay range $75,000.00/yr - $85,000.00/yr

Job summary As

Executive Chef , you will lead the culinary operations, including menu development, creativity in dish preparation, and adherence to culinary standards. You will supervise budgeting and food costing, ensure client and customer satisfaction, and foster employee training and growth. You will be a lead culinarian within our dining programs.

Key Responsibilities

Plan regular and modified menus according to established guidelines, follow standardized recipes, portioning and presentation standards.

Complete and apply daily production worksheets and waste log sheets.

Supervise and mentor chefs, cooks, and other team members on food preparation, safe handling, equipment operation, and sanitation practices.

Ensure the implementation of culinary standards, including recipe compliance and food quality.

Lead inventory of food and non-food supplies, maintaining compliance with established guidelines while ensuring necessary products are available when needed.

Enforce federal, state, and local health and sanitation regulations and department procedures.

Follow health and sanitation regulations and department procedures, as evidenced through audits by local health departments and third-party entities.

Forecast annual food and labor costs and supervise actual financial results.

Foster strong client relationships to align programs with objectives, drive satisfaction and retention.

Perform other duties as assigned to support the efficient functioning of dining service operations.

Qualifications

A.S. degree or equivalent experience.

Three or more years of progressive culinary or kitchen management experience, depending on formal degree or training.

Experience in high-volume, hands-on foodservice operations, preferably from college/university dining.

Must be experienced with computers.

ServSafe® Certified.
