Job Description
Omni Oklahoma City Hotel is seeking an experienced Executive Chef for Bob’s Steak & Chop House to join the team of this brand new upscale hotel. The chef will be responsible for the efficient and effective running of the kitchen and food production outlet, ensuring operating costs are minimized. The chef will execute all company policies and procedures, ensuring that all services provided meet established standards within agreed budgetary controls, and advise the General Manager on all matters relating to the kitchen area.
Responsibilities
Assist the General Manager in budgeting (food cost/payroll/etc.) and control overheads to achieve budgetary targets.
Coordinate with other Food and Beverage managers on market potential and product availability.
Adhere to Bob’s Steak & Chop House Standard Recipes and design daily features in alignment with brand standards, including costing.
Work with the Food and Beverage Director on capital expenditures for the department.
Ensure guest satisfaction through smooth day‑to‑day operations.
Maintain purchasing and receiving standards, testing and evaluating product quality and waste.
Forecast volumes to control food requisitioning and maximize profitability.
Create recipes, production methods, and banquet menus as needed.
Inspect all food service sections during service to ensure standards are maintained.
Control equipment schedules and maintenance.
Stay informed of local and international market trends and competitor offerings.
Promote in‑house sales activities (culinary festivals, chef specialties, competitions).
Plan, organize, and control staffing, including overtime scheduling.
Recruit suitable staff in conjunction with personnel and the Food and Beverage Director.
Oversee training and development of kitchen staff, ensuring effective on‑the‑job and off‑to‑job training.
Comply with state employment legislation and industrial relations.
Establish efficient office procedures for menu planning, procurement, correspondence, filing, and records.
Perform all duties applicable to a department manager within the hotel.
Participate in critical path task sheets and attend all required department meetings.
Qualifications
Minimum 4 years of culinary management experience in a high‑volume, fine‑dining steakhouse (preferred).
Proven culinary skills with ability to lead, develop, and motivate staff.
Ability to teach employees how to interact with guests and resolve internal requests courteously.
Creative, up‑to‑date with new concepts and food trends.
Basic mathematical skills for financial reporting.
Maintain consistent health and safety standards.
Excellent written and verbal communication skills.
Ability to multi‑task and work in a fast‑paced environment.
Train staff to produce high volumes while maintaining quality per Omni standards.
Proficient with computers.
Experience managing payroll and schedules.
Flexible schedule, including weekends and holidays.
College education and/or culinary degree preferred.
Maintain all required food‑handler qualifications.
Capable of lifting up to 40 lbs; pushing/pulling carts up to 75 lbs; standing for extended periods with bending and twisting.
Utilize culinary tools (knives, commercial equipment, etc.) and mouth‑sensing skills.
