The Hilton Waikoloa Village is searching for an experienced Specialty Restaurant Manager (Nui Italian) to oversee Nui Italian.

Sitting among swaying palm trees, white sand beaches and overlooking the glistening blue Waialua Bay, Hilton Waikoloa Village is a destination nestled on 62 acres of Kohala coastline. This oceanfront oasis is blended with exceptional resort accommodations and classic Hawaiian hospitality. Featuring 647 guest rooms, 7+ dining outlets and over 240,000 square feet of indoor/outdoor event space, the choices are abundant at this award‑winning resort.

Salary Range $83,000‑$88,000

Schedule 12 p‑10 p/11 with flexibility; evenings, weekends, and holidays.

What will I be doing?

Manage all outlet operations, including guest service standards, product quality, cost controls, and overall profitability.

Oversee marketing initiatives, systems use and management, budgeting and forecasting, department management, policy and procedure implementation and enforcement, and meeting participation and facilitation.

Monitor and develop team member performance; supervise and support professional development, conduct counseling and evaluations, and deliver recognition and reward.

Monitor and assess product and service and satisfaction trends, evaluate and address issues, and implement improvements.

Ensure compliance with health, safety, sanitation and alcohol awareness standards.

Initiate and implement marketing and ups‑selling techniques to promote restaurant food and beverage and services, and maximize revenue.

Ensure team members have current knowledge of outlet offerings, products, services, facilities, events, pricing, policies and local area events.

Recruit, interview and train team members.

The ideal candidate will possess:

Minimum two (2) years of Food & Beverage management experience in a full‑service, stand‑alone or hotel restaurant.

Demonstrated leadership ability with a track record of successfully coaching and developing teams.

Intermediate wine and liquor knowledge required; advanced knowledge preferred.

Outstanding communication and interpersonal skills.

Proficiency in Microsoft Office.

Open availability to work varying days and hours including nights, weekends, and holidays.

Ability to bend, stoop, walk and push/pull/lift up to 50 lbs.

Experience working at a fine dining restaurant preferred.

Experience managing in a unionized environment preferred.
