Overview
Pastry Sous Chef role at Atlantic Fields Club located at one of Discovery Land Company’s locations: Atlantic Fields, near Hobe Sound, FL. The Pastry Sous Chef will oversee the pastry kitchen with the Pastry Chef and work closely with the Culinary team, Food and Beverage Service Team, and Member Services. This role focuses on innovative pastry techniques, bakery items, and presentation of a la carte desserts across casual to fine dining experiences within the resort. Responsibilities
Work with all culinary and F&B leaders to create exemplary culinary standards and an environment of continual improvement. Lead by example in the Pastry department and anticipate business levels. Supervise daily procurement of specific pastry ingredients. Ensure continual product quality control and procedures are maintained daily. Minimize spoilage, waste, and overproduction with consistent procedures. Ensure all cleaning schedules, temperature records, opening/closing checklists are completed and recorded daily. Continuously create and implement new menu ideas with the Executive Chef. Organize the kitchen and preparations efficiently to cope with daily restaurant covers. Monitor inventory levels through regular inventory checks. Maintain all equipment and ensure proper handling and maintenance by culinary staff. Be responsible for the quality of all pastry items and ensure standard recipes are followed consistently. Check food for taste, temperature, and visual appeal; ensure uniform dishes and correct portion sizes per Executive Chef specifications. Prevent the use of contaminated products in any phase of food preparation. Comply with government, safety, health, and security standards at all times. Perform any other duties as assigned. Qualifications
Culinary degree and pedigree preferred. Proven experience and expertise in pastry and desserts. Minimum of four to five years’ experience in a large world-class resort, hotel, or club. Experience sourcing local ingredients and creating menu items based on seasonal ingredients. Additional Requirements
Must be able to work flexible hours, including evenings, weekends, and holidays. Long hours may be required due to business demands. Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members. Ability to work in a team environment and stay calm during peak times. Ability to read, write, speak, and understand English; additional languages preferred. Physical ability to work indoors and outdoors in all weather conditions, standing, walking, and lifting up to 50 pounds as needed. Benefits
