Unit Description The Ernest N. Morial Convention Center is located in Downtown New Orleans, Louisiana. With 1.1 million square feet of prime, contiguous exhibit space, the award winning New Orleans Ernest N. Morial Convention Center is the sixth largest convention facility in the nation, and it consistently ranks in the country's top ten of facilities that hold the most conventions and tradeshows annually.

Job Overview The Sous Chef I is responsible for assisting in the supervision of kitchen operations, preparing high-quality food for retail operations, and leading culinary staff in maintaining consistency and culinary excellence in a fast-paced convention environment.

Essential Responsibilities

Assist culinary leadership with daily kitchen operations and execution of convention and retail food service operations.

Develop and oversee daily prep sheets and production to ensure consistent execution, accurate portioning, and adherence to company standards across all kitchen stations.

Assist in creating and managing staff schedules to balance labor costs with business needs while ensuring adequate coverage for all shifts.

Supervise and train line cooks, prep staff, and utility workers.

Maintain compliance with health, sanitation, and safety standards (HACCP, ServSafe, etc.).

Monitor food costs to align with budgetary goals.

Oversee kitchen cleaning schedules, equipment maintenance, and inventory management.

Provide input on menu development, specials, and seasonal offerings.

Uphold and embody the Raleigh Convention Center's commitment to guest experience and service excellence.

Qualifications/Skills

3+ years of professional kitchen experience, with at least 1 year in a management role.

Culinary degree or equivalent experience strongly preferred.

Strong knowledge of food safety, kitchen operations, and production in high-volume environments.

Ability to lead and mentor staff with professionalism and accountability.

Experience in convention centers, amphitheater or hotels is strongly preferred.

Flexible availability including evenings, weekends, holidays, and event days.

Other Requirements

Able to work effectively and safely while subject to wet floors, temperature extremes and excessive noise; must be able to lift up to 50 pounds in weight; must be able to maneuver in an often tightly-quartered environment.

Hours may be extended or irregular to include nights, weekends and holidays.
