ASST MANAGER - CASINO SERVICE
Location: Mettler, CA (Hard Rock Casino Tejon)
Overview Under the direction of the Beverage Manager, the incumbent is responsible for operating and maintaining an efficient and profitable front‑of‑the‑house food services operation, as well as for participating in the planning and direction of all Food & Beverage departments. The role manages the activities and functions of food outlets, including budget monitoring, staffing, and performance, ensuring the delivery of quality service and appropriate price value consistent with Hard Rock objectives.
Primary Responsibilities
Hire, motivate, evaluate and supervise front‑of‑the‑house staff to ensure they receive adequate guidance and resources to achieve objectives.
Ensure staff morale through quality supervision and training, providing training for all assigned outlet personnel to meet guest service standards.
Establish department standards, guidelines, and objectives; maintain administrative processes such as budget and staffing to ensure efficient operation of outlets.
Analyze restaurant performance by monitoring guest satisfaction, volume, cost, marketing promotions and competitors’ programs to implement innovative changes that maintain a superior product and service.
Work with the Director – F&B to analyze food cost and forecast business trends to recommend menu price and special revisions that meet company needs.
Monitor and evaluate Food & Beverage service by observing operations, surveying guests, and coordinating with team members to develop strategies for guest service improvement and financial return.
Maintain accurate inventory levels of all restaurant supplies.
Conduct inspections of front‑of‑the‑house areas to ensure compliance with procedures, security of company assets, and guest and employee safety.
Investigate and resolve guest complaints to maintain positive relations.
Coordinate with the culinary department to provide and maintain an optimum dining experience.
Collaborate with Marketing and Player Development to prepare for increased guest volume from group functions and special events.
Assist with operations in all Food & Beverage outlets.
Perform other duties as assigned.
Qualifications
High school diploma or equivalent plus 6 years of restaurant service experience, with at least 2 years in a supervisory role; or a bachelor’s degree in Restaurant/Beverage Management, Business Administration or equivalent plus 3 years of restaurant service, with at least 1 year in a supervisory role.
Advanced knowledge of Excel.
Skills
