Banquet Food and Beverage Manager Omni Hotels & Resorts – Omni Chicago Hotel, Chicago, IL

The Banquet Food and Beverage Manager will ensure proper servicing of all banquet functions and assist the F&B outlets as needed. This role involves training and supervision of all personnel and encompasses the following responsibilities.

Salary: $63,500 – $79,500 per year.

Responsibilities

Represents management at functions

Determines set‑ups in conjunction with Director of Catering

Attends pre‑and post‑cons

Maintains china, glass, and silver inventory

Schedules Housemen and Servers to cover business levels

Manages payroll, forecasting and overtime controls

Prepares and administers staff reviews

Recruits, interviews and trains staff

Implements procedures and policies and handles coaching and counseling when expectations are not up to Omni standard

Trains staff on service engagement and food presentations

Achieves high audit scores through strict scrutiny and daily preparation

Coordinates functions with service staff and culinary

Ensures guest satisfaction through supervision and delegation; checks food quality and courteous performance

Manages food costs, coordinates with culinary and stewarding for food recovery & waste minimization

Supervises floor during events, managing all banquet associates

Conducts pre‑event meetings with service staff daily

Briefs waiters on functions and service procedure

Establishes high standards of quality service and maintains through training and continuous upgrading

Maintains equipment and keeps pars up

Records, reports, closing reports and payroll costs

Monitors productivity; coaches and counsels associates below standards

Inspects function rooms; submits work orders to engineering for maintenance

Adapts staffing in response to business fluctuations

Maximizes profits while ensuring guest satisfaction

Stays updated on new food and wine trends; sets pace for quality operation

Contributes to event profitability through effective cost control; ordering and scheduling

Identifies staffing needs, assists with recruitment and hires final candidate

Performs any other duties as assigned by management

Qualifications

Bachelor’s degree or equivalent experience

Previous Restaurant Manager experience required

Flexible schedule including evenings, weekends, and holidays

Understanding of financial statements and labor productivity
