Responsibilities
Plan and develop menus for considering factors such as product availability, service cost, marketing conditions, number to be served, seasonal factors, etc. Abreast of all the current industry trends and develops menus keeping the guest's expectations in mind.
Work with the General Manager to ensure that the division goals in terms of food and service quality are met.
Assist with building a 5 star team and develop, mentor and lead hourly and salaried BOH culinary leaders.
Ensure that sanitation standards as set forth by the hotel and the state comply, as well as the cleanliness and neatness of the kitchen.
Aware of the market trends and source out the best available products depending on the season.

Qualifications
Minimum of 5+ years of culinary leadership experience in fine-dining.
In-depth understanding of the Mediterranean cuisine is strongly preferred.
High volume, full service restaurant experience of 15 million annual revenue.
Relevant professional qualifications (eg. Culinary, Hospitality, Business, Marketing).
Salary: $125,000 - $155,000
