The Role
You’ll own end‑to‑end gummy R&D: ideation, benchtop trials, pilot scale‑up on our manufacturing line and continuous cookers, and hand‑off to operations—all while ensuring delightful texture, flavor, and label‑claim accuracy.
Key Responsibilities
Develop new formulas (gelatin, pectin, starch‑free, sugar‑free) that meet nutritional, regulatory, and cost targets.
Translate customer briefs into prototype gummies; iterate quickly based on sensory and analytical data.
Scale from 1 kg lab batches to 500 kg production runs, optimizing °Brix, pH, AW, and set time.
Draft and maintain all specification sheets, Nutrition/Supplement Facts panels, and process SOPs in compliance with FDA 21 CFR Part 111, SQF, and cGMP.
Partner with Procurement to source novel actives, colors, and flavors; manage vendor documentation (SDS, COA, allergen).
Lead shelf‑life and stability studies (water activity, microbial, vitamin potency).
Troubleshoot production issues (shrinkage, bloom, stickiness) alongside QA and Maintenance teams.
Train production staff on new processes and conduct post‑launch continuous‑improvement projects.
Qualifications
BS/MS in Food Science, Food Engineering, or related; PhD welcome but not required.
10 + years in confectionery or dietary‑supplement formulation, with at least 10 years of hands‑on gummy development.
Deep knowledge of hydrocolloids (pectin, gelatin, agar), sugar‑free systems (allulose, erythritol, HM vs. LM pectin), and actives (creatine, collagen, botanicals).
Familiarity with HACCP, SQF/BRC, and California Proposition 65.
Strong analytical skills (Minitab or Excel), sensory evaluation training, and project‑management chops.
Clear, concise communicator—able to translate science for both customers and production operators.
Salary range:
$75,000 – $85,000
base + annual performance bonus
