We’re looking for a strategic leader to drive the profitability, reputation, and growth of Takibi restaurant located at our Portland headquarters. The role focuses on delivering exceptional food and hospitality experiences while expanding offerings and events that attract new customers.
Purpose The Director of Hospitality Operations leads Snow Peak’s food and hospitality operations, with primary focus on Takibi restaurant. Takibi expresses Snow Peak’s outdoor lifestyle philosophy through food and hospitality – it’s how we demonstrate our commitment to quality, craft, and community.

Status: Full Time, Benefit Eligible
Reports To: VP of Snow Peak USA
Schedule: On-site 5 days per week (45–50 hrs) with presence overlapping Takibi weekend operations (either Tuesday‑Saturday or Sunday‑Thursday)
Salary: $85,000 – $110,000 DOE
Essential Duties Lead Department Strategy
Balance priorities across three areas: 1) operational excellence 40%, 2) Takibi growth strategy 40%, 3) future food and hospitality ventures for Snow Peak 20%
Own Takibi’s profit and loss, including financial targets, expense management, labor, budget, and profitability metrics
Work with Snow Peak’s Executive Chef team in Japan and executive leadership to establish long‑term objectives aligned with Snow Peak's mission and hospitality goals
Lead food hospitality strategy, including guest experience standards, service model evolution, and expansion opportunities
Provide regular operational, cultural, and financial updates to executive leadership and align objectives across Snow Peak departments
Manage Restaurant Operations
Lead restaurant operations through both strategic oversight and active participation in key moments of service. Delegate routine execution to the Service Manager and Executive Sous Chef while remaining visible and engaged on the floor when needed.
Define hospitality excellence standards, resolve escalated issues, and establish a culture of consistency, professionalism, and accountability
Ensure critical processes have clear procedures (SOPs), regularly audit for compliance, and maintain all safety, sanitation, and legal requirements
Monitor and manage COGS and labor costs to align with budget and operational targets
Build and Lead a High‑Performing Team
Cultivate an inclusive and equitable workplace culture rooted in respect, curiosity, and hospitality
Partner with HR to lead hiring, onboarding, performance management, and staffing plan decisions
Lead regular meetings with FOH and BOH leadership to align on operational goals, team dynamics, and guest experience
Facilitate all‑staff meetings and training to reinforce standards, culture, and communication
Mentor and coach restaurant leaders; foster internal mobility and team development
Maintain working knowledge of labor law and ensure compliance
Strategic Programming and Brand Alignment
Lead Takibi’s event programming and special initiatives that drive traffic and brand visibility
Partner with brand and project teams to integrate restaurant work with broader Snow Peak campaigns and initiatives, ensuring guest experiences align with Snow Peak's values
Requirements
Perform other related duties and projects as assigned
Experience
7 years of restaurant, 5 years of management experience
Skills
Extensive knowledge of and passion for Japanese food and beverage
Proficient understanding of Microsoft Office Suite
Proficient knowledge of compliance related laws and regulations
Proficient understanding of training in food safety
Proficient writing and documentation
Demonstrated success in the use of written personnel performance management tools
Proficient expertise in Excel and performance analysis and reporting
Advanced understanding of the financial and business acumen to drive profitability
Professional working fluency in Japanese (preferred)
Abilities
Ability to mentor, coach and develop other leaders and build high functioning teams
Ability to act with integrity, professionalism, and confidentiality
Ability to operate POS (point of sale) systems, back‑of‑house systems and restaurant operating systems
Excellent leadership and management skills with ability to motivate
Excellent interpersonal, negotiation, and conflict resolution skills
Superior time management skills with a proven ability to efficiently manage multiple, concurrent, time‑sensitive projects and priorities
Superior problem‑solving abilities to meet ambiguous and multicultural needs
Extremely organized with meticulous attention to detail
Physical Effort
Lift and move up to 50 pounds
Stand and walk for an 8–10 hour shift, including moving safely through all areas of the restaurant, which may include stairs, uneven and slick surfaces
Ability to bear exposure to hot and cold environments
