Job Description
The Pastry Sous Chef oversees production of all pastries, including Italian pasticcini, cakes, desserts, cookies, candies, and other dolci. Reports directly to the Pastry Chef de Cuisine; manages a pastry team of about 10 employees.
Supervises production of all pastry items for counters and restaurants.
Assists in managing the pastry team: schedules, payroll, feedback, motivation, training on Italian pastry production and practices, coaching and counseling.
Verifies all foods meet quality standards in portion size, flavor, texture, consistency.
Produces decorative centerpieces and special orders.
Orders and requisitions all supplies for the pastry shop.
Maintains clean and sanitary food production area according to Department of Health standards.
Performs other duties as required or assigned.
Qualifications
4+ years of experience in a high-volume pastry preparation position.
Knowledge of Italian pastries and techniques.
Excellent communication and leadership skills.
Intermediate computer skills.
Preferred: degree from a post‑secondary culinary/pastry arts training program.
Job Requirements
Availability to work onsite with a flexible schedule often including evenings and weekends.
Ability to lift up to 50 pounds.
Ability to exert well‑paced mobility for up to 8 hours, including standing, walking, bending and squatting.
Ability to use a burning oven, commercial stand mixer and other pastry baking equipment.
Compensation : This position pays an annual salary of $70,000 - $75,000.
