Job Summary As the Executive Chef, you will oversee kitchen operations, maintain a safe and sanitary work environment, and direct meal preparation in accordance with corporate programs and guidelines. This role is ideal for an energetic, entrepreneurial culinary professional.
Key Responsibilities
Plan regular and modified menus according to established guidelines.
Follow standardized recipes, portioning, presentation, and complete daily production worksheets and waste log sheets. Taste completed meals to ensure quality.
Train kitchen staff in food preparation, safe handling, equipment operation, and food safety and sanitation based on company and regulatory standards.
Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas; ensure staff follows and completes them.
Maintain inventory of food and non‑food supplies to stay within established guidelines and ensure product availability.
Make decisions regarding utilization of leftover food products within company guidelines.
Comply with federal, state, and local health and sanitation regulations and department sanitation procedures, evidenced through local health department and third‑party audits.
Follow facility, department, and company safety policies and procedures, including occurrence reporting.
Participate in departmental meetings, staff development, and professional programs as appropriate.
Preferred Qualifications
A.S. or equivalent experience.
5+ years of progressive culinary/kitchen management experience (depending on formal degree or training).
Extensive catering experience is a plus.
High‑volume, complex food service operations experience is highly desirable.
Institutional and batch cooking experience.
Hands‑on chef experience is required.
Comprehensive knowledge of food and catering trends focused on quality, production, sanitation, food cost controls, and presentation.
Proficient computer skills, including Microsoft Office (Word, Excel, PowerPoint), Outlook, e‑mail, and the Internet.
Willingness to participate in client satisfaction programs and activities.
ServSafe certification is highly desirable.
