About Our Bakery Team We are a high-volume,
scratch bakery
known for creating Bavarian-style breads, handmade pastries, traditional Bavarian tortes, and custom-decorated sugar cookies. Every product we create is made from scratch using traditional methods and recipes handed down by our founder, Dorothy Zehnder. We pride ourselves on producing over 250,000 loaves of bread, and thousands of cookies, pies, pastries, and specialty desserts each year. We are seeking a talented
Bakery Manager
to lead our team while maintaining the highest standards of quality and craftsmanship.
Position Overview The
Bakery Manager
will oversee both our
3rd shift bread production
and
4am day shift pastry & dessert teams . This role combines leadership in both baking and administrative responsibilities, focusing on quality control, team training, inventory management, and the creation of new seasonal products. As we’ve recently purchased FlexiBake, the manager will also spearhead the integration of this software system, using it to streamline administrative tasks such as inventory management, ordering, and reporting. The role also includes coordinating the fulfillment of external orders for both online sales and local vendors, ensuring accuracy and timely delivery.
Key Responsibilities
ProductionOversight:
Supervise both the 3rd shift (10pm-6am) bread team and the day shift (4am-12pm) pastry, torte, and cookie decorating teams.
Baking& Pastry Management:
Participate in, train, and oversee the production of Bavarian-style breads, handmade pastries, and traditional Bavarian tortes.
SugarCookie & Cake Decorating:
Lead, train, and assist with the creative decoration of sugar cookies and cakes, ensuring quality and artistic presentation.
FlexiBakeIntegration:
Spearhead the integration of FlexiBake, our new inventoryand order management system. Use the platform for inventory tracking, ordering, production scheduling, and reporting.
Inventory& Ordering:
Manage ingredient inventory levels, track orders, and ensure timely procurement using FlexiBake to streamline these processes.
TeamDevelopment & Training:
Train, mentor, and motivate staff, ensuring they are equipped with the skills and knowledge to succeed.
QualityControl:
Monitor product quality, ensuring all baked goods meet ourestablished recipes and standards.
AdministrativeDuties:
Up to 40% of tasks may be administrative, including managing schedules, using FlexiBake for reporting, and overseeing daily operations.
ExternalOrders:
Oversee the coordination of external orders, both online and from local vendors, ensuring orders are fulfilled accurately and on time.
Collaboration& Innovation:
Work closely with our retail, kitchen, and diningroom management teams to develop new seasonal products and drive innovation in the bakery.
Qualifications
Degree or formal training in Baking & Pastry Arts or Culinary Arts preferred; equivalent experience considered.
3+ years professional bakery experience. High-volume commercial bakery preferred.
Strong hands-on baking skills with knowledge of scratch baking, artisan breads, pastries, and cake decorating.
Ability to train, coach, and develop team members on technique, quality, and consistency.
Proven managerial experience in a bakery or food production environment.
Experiencewith inventory management systems or the ability to quickly learn newsoftware (experience with FlexiBake is a plus).
Strongorganizational and time-management skills, with the ability to balanceboth production and administrative duties.
Strongcommunication skills for collaborating with staff, vendors, and guests.
Abilityto work flexible hours, overseeing both day (4am-noon) and overnight (10pm-6am) shifts.
