Job Overview As a Food Administrator I, CF, you will plan, organize, and direct all food service and dietary activities in a correctional health care program. You will collaborate with clinical personnel on nutrition assessments, develop menus, ensure compliance with state regulations, supervise staff, and maintain safety and quality of food service.
Responsibilities
Plan, organize, and direct all food service and dietary activities in a correctional facility serving 500+ residents.
Work with clinical personnel on nutrition assessments, needs, dietary interventions, and strategies.
Develop, interpret, and apply standards and procedures governing the operation of the food service department.
Plan menus, estimate food requirements, and direct preparation and service of food in accordance with the State food control system.
Inspect food facilities for compliance with sanitary, safety, and housekeeping standards.
Plan and conduct in‑service training (IST) programs for food service staff.
Maintain order and supervise conduct of inmates, and protect the safety of people and property.
Qualifications
One year of experience in California state service performing the duties of a dietitian.
OR One year of experience in a hospital as a dietitian, nutritionist, or food service manager with technical direction of a group of diet pantry employees AND completion of an approved internship in institutional management or dietetics (or membership/eligibility for the American Dietetic Association).
OR Three years of experience as a dietitian, nutritionist, or food service manager with technical direction of a dietary unit, one year under a professionally trained dietitian, and a Bachelor’s Degree in Foods, Nutrition, or Institutional Management.
Benefits & Pay Pay range: $88,255 – $116,738 (base pay). Note: Effective July 1 2025, a 3 % salary reduction applies under the Personal Leave Program (PLP 2025).
