AVAIL SENIOR LIVING – JOB DESCRIPTION
Position Cook
Reports To Dining Services Director
Department Dietary
Broad Function Assume the responsibility for the preparation and deliverance of quality food to the residents of the community. Has the total responsibility for the preparation, appearance, temperature control and presentation of the meals to our residents. Also assumes the total responsibility for following menus according to regulatory guidelines. Follow all health, safety, sanitary and infection control policies always.
Performance Responsibilities
Prepares and cooks food according to standardized recipes and menus.
Adheres to appropriate amounts of food supply needed for menus of the day and time.
Assumes responsibility for temperature control of food served to residents.
Assumes responsibility for the efficient functioning of the food and beverage department.
Adheres to regulatory guidelines in the storage of frozen food, perishables, and dry goods.
Adheres to regulatory guidelines in the cleaning of equipment used in food preparation.
Adheres to established policy and procedures in food sanitation.
Ensures that all dishes and equipment are clean and free from food particles.
Ensures that all dishes and equipment can dry thoroughly before being stored.
Oversees utility workers in performance of their duties and responsibilities.
Monitors sanitation in the food and beverage department.
Ensures the floor is free of debris and dirt.
Ensures the stainless-steel appliances are cleaned and polished.
Ensures that the carts are cleaned both inside and outside and free of food particles, water pooling, and paper articles.
Ensures that the food preparation area is clean and neat.
Ensures that the stove, stove range, hood, and ovens are free of grease and spilled food after each meal and grill area is clean and free of grease and food particles.
Ensures that the dish room and hallway are cleaned after each meal, including floor and tile.
Locks the food and beverage freezer, refrigerator, and dry storage areas at the end of the day.
Monitors back door; back door must remain closed at all times.
Locks food and beverage department doors at the end of the day.
Assures compliance with community policy on all food and beverage issues.
Provides effective communication between food, beverage, and other community disciplines. Performs other duties as assigned.
Cook Job Description
Ensure compliance with state, federal and local agency guidelines for food service delivery and sanitation.
Maintains positive interaction with residents, family members, significant others, and community personnel.
Prepares food according to food and beverage menus.
Makes frequent rounds of food and beverage departments to assure proper sanitation procedures are always adhered to by staff.
Ensures optimal quality resident food preparation and delivery is carried out by food and beverage personnel.
Communicates current food and beverage practices to all staff to assure compliance with regulatory changes and practices.
Performs miscellaneous work assignments as required.
Sees that resident food needs and requests are met.
Qualifications
High School diploma or equivalency.
Ability to deal tactfully with personnel, residents, family members, visitors, government agencies/personnel, and the public.
Must be able to read, write, speak, and understand English.
Minimum age of sixteen years.
Must be able to follow oral and written instructions.
Food handler’s permit.
Physical Requirements
Works in well-lighted/ventilated areas. Environment is warm for cooking.
Use proper body mechanics when bending or lifting.
May sit, bend, lift, and move intermittently during working hours.
Works beyond normal hours including weekends, evenings, and holidays when necessary.
Exposure to infectious waste, diseases and conditions, including TB and hepatitis B virus.
May be required to lift, push, pull and move a minimum of fifty pounds.
May be involved in resident evacuation.
Subject to falls, burns from equipment, odors, etc., throughout the workday.
May be exposed to heat/cold temperatures in kitchen/storage areas.
Must be able to move intermittently throughout the workday.
Must possess sight/hearing/speech senses, or use prosthetics that enable these senses to function adequately for the position.
