Manages and directs all brewery operations to ensure effective and profitable operation and growth. Seeks an independent, self‑driven Brewer to take full control of success, pushing the Old 290 brand forward through high‑quality craftsmanship, recipe innovation, and strategic market positioning. Acts as a vital technical partner to the Wholesale Sales team, ensuring product integrity and brand consistency as the reach expands beyond the resort. Duties

Wholesale Support & Strategic Partnership:

Collaborative Growth: Partners closely with the Wholesale Sales Representative to align production capabilities with market opportunities, providing key insights on product availability and release timelines. Technical Brand Ambassador: Accompanies the Wholesale Representative on key account visits or distributor meetings as the technical expert and "Face of the Brand," sharing the story and craftsmanship behind the beer to help close placements.

Production Planning for Distribution:

Manages production schedules to ensure sufficient inventory for both internal taproom demand and external wholesale orders, preventing stockouts while maintaining freshness. Product Readiness: Ensures all wholesale products are packaged, labeled, and documented in strict compliance with TTB/TABC standards before they leave the facility.

Brand & Strategic Leadership:

Takes ownership of the beer portfolio, developing a distinct identity for Old 290 Brewery that drives local and regional brand recognition. Makes the brewery "face" by educating guests and promoting the brand. Maintains knowledge of industry trends to keep the brewery current and competitive. Controls sales and profitability by managing COGS and minimizing waste.

Brewing Operations:

Manages and oversees the entire brewing operation including wort production, fermentation, cellaring, filtration, and packaging (kegging/canning). Establishes and monitors beer quality standards, consistency, and presentation. Establishes par levels for raw materials and chemicals; monitors inventory; authorizes purchase orders. Maintains detailed knowledge of all beverage selections, preparation methods, ingredients, and flavor profiles.

Facilities & Compliance:

Ensures all food and beverage operations comply with health and licensing guidelines. Prepares accurate and timely reports (incl. excise tax and production logs). Monitors equipment and production areas; rectifies deficiencies and schedules preventive maintenance.

Collaboration & Management:

Interfaces with the Executive Chef to plan beer pairings, review seasonal menus, and develop beer‑centric events. Hires, trains, supervises, coaches, counsels, disciplines, motivates, and develops brewery staff. Assists staff with job functions as needed to ensure optimum service to all guests. Performs other duties as assigned by manager.

Minimum Requirements

Reliable transportation. Valid Texas Driver’s license with good driving record. Ability to pass pre‑employment testing (background check, etc.). Full availability to work days, evenings, nights, weekends, and holidays. Job Knowledge

Two to four years of related experience or equivalent; commercial brewing experience required. Current knowledge of regional and national trends in food and beverage. Demonstrated proficiency in supervising and motivating subordinates. Working Conditions

Works indoors throughout shift in bi‑level structures with extensive facilities. Works well lit rooms with minimal exposure to hazardous substances and fumes; possible exposure to blood‑borne pathogens. Physical/Mental Demands

Regularly required to stand the entire shift. Frequently uses hands or fingers, walks, sits, stoops, bends, and reaches with hands and arms. Occasionally lifts or moves up to 75 pounds. Calculates figures and amounts. Coordinates multiple tasks simultaneously. Collects, interprets, and analyzes complex data and information. Understands and responds to a diverse population.
