Job Brief We are seeking a skilled and passionate Sushi Chef to join our team at Yamashiro Hollywood. As a Sushi Chef, you will be responsible for preparing high‑quality sushi dishes with precision, creativity, and attention to detail. You will work collaboratively with our culinary team to deliver an exceptional dining experience to our customers.

Responsibilities

Prepare a wide variety of sushi dishes, including nigiri, maki, sashimi, and specialty rolls, according to established recipes and presentation guidelines.

Ensure the freshness and quality of ingredients by inspecting and selecting the finest seafood, vegetables, and other necessary components.

Maintain a clean and organized work station, adhering to food safety and sanitation standards at all times.

Collaborate with the kitchen team to plan and execute sushi menus that cater to diverse customer preferences and dietary restrictions.

Demonstrate excellent knife skills and precision in the preparation and slicing of fish and other ingredients.

Stay updated on current industry trends and techniques to continuously enhance and innovate our sushi offerings.

Monitor inventory levels, conduct regular stock checks, and assist in placing orders to maintain a sufficient supply of ingredients and equipment.

Train and mentor junior sushi chefs, ensuring consistent quality and adherence to recipes and presentation standards.

Skills Required

Proven experience as a Sushi Chef, with a strong understanding of sushi preparation techniques and Japanese cuisine.

Expertise in handling and slicing raw fish, as well as knowledge of seafood quality and freshness.

Excellent knife skills and attention to detail to create visually appealing sushi presentations.

Ability to work in a fast‑paced environment while maintaining a high level of accuracy and quality.

Knowledge of food safety and sanitation regulations, with a commitment to maintaining a clean and hygienic work environment.

Strong teamwork and communication skills, with the ability to collaborate effectively with the kitchen team.

Creativity and a passion for exploring new flavors and ingredient combinations.

Certification from a reputable culinary institute or sushi training program is preferred.
