Remote Breakfast Cook/Baker, SLB East Camp Location:

Anchorage, AK (point of hire). 3-week on / 3-week off rotational schedule; operates at remote camp on Northern Slope. Wage DOE & benefits. Remote Kitchen.

The Remote Breakfast Cook/Baker assists with the preparation, production, and presentation of a variety of foods. It involves completing production sheets, directing and training food service personnel, and performing cleaning duties within remote camp and industrial facilities. The role also includes the production of a wide variety of bakery goods. All duties are performed in accordance with NMS mission, vision, and values, as well as departmental policies and procedures.

Responsibilities

Perform all main line food production duties for assigned shift.

Prepare and produce a wide variety of bakery products in a remote camp setting.

Complete pastry preparations including mixing, baking and frying as needed.

Review daily needs with supervisor, complete production sheets, review maintenance reports, and verify supply needs.

Assist supervisors with menu and recipe development.

Monitor and replenish kitchen production items using proper rotation procedures.

Cook items such as breakfast, lunch, dinner, coffee, and sandwich trays.

Place, present, and restock items such as vegetables, salads, meats, cheeses, and bakery items.

Use production sheets to determine amounts needed for serving areas.

Employ a variety of food preparation procedures and equipment, including cutting instruments.

Assist personnel in food production or special duties.

Serve in the service line as needed.

Handle special food preparation or cleaning projects.

Rotate food items appropriately.

Wipe down, clean and sanitize preparation areas, salad bar area, workstation and associated equipment.

Clean various food service equipment and storage areas; perform general polishing, sweeping, wiping or mopping.

Verify and oversee food serving lines ensuring they are properly stocked, set up and cleaned.

Remove garbage, set up or break down tables, snack bars, display cases and serving lines.

Communicate with supervisors regarding meal and backup needs.

Complete menu display announcements as directed by a supervisor.

Organize freight on a regular basis.

Perform periodic laundry duties or scheduled cleaning tasks.

Supervise assigned staff, either directly or through lead personnel.

Ensure quantity and quality control in food production and overall sanitation of assigned areas.

Assist in the supervision and training of food service personnel.

Instruct others on proper rotation procedures for produce and dairy products.

Maintain production equipment and storage areas following sanitation, safety and operational procedures.

Notify supervisor if safety and sanitation standards are not met.

Responsible for overall staff supervision.

Other duties pertaining to the department or unit’s success may be assigned.

Qualifications

High School Diploma or GED equivalent.

At least three (3) years of directly related restaurant cooking and/or baking experience with knowledge of high-volume production, equipment and supervisory techniques.

Ability to instruct and train others and manage multiple simultaneous tasks.

Must hold or obtain an Alaska Food Worker’s Card and/or ServSafe Certification upon hire.

Must pass all pre‑employment contract requirements, including drug test, physical fitness assessment, and hearing test.

Ability to cooperate and work as part of a team with employees, customers and clients.

Ability to make decisions with minimal supervision.

Must be able to stand on your feet for 12 hours per shift, scheduled during rotations.

Must be able to live in dormitory‑style accommodations and meet cleanliness standards of the remote camp.

Contract requires speaking, understanding, reading and writing English.

Must meet all safety guidelines and regulations set by the company and client.

Industrial kitchen setting in a remote camp.

Must be able to stand, walk, climb, push, pull, use hands and arms, stoop, kneel and crouch continuously.

Must be able to travel by plane and/or bus to remote camps.

Physical requirements: Fit For Duty Test

Lift 50 lbs. from floor to knuckle 2 times.

Lift 50 lbs. from floor to waist 2 times.

Lift 50 lbs. from floor to shoulders 2 times.

Lift 30 lbs. from floor to crown 2 times.

Carry 20 lbs. with two hands for a minimum distance of 20 feet.

Push horizontally with a peak force of 50 f‑lbs. with two hands.

Perform alternate cross‑over toe touches 5 times each side.

Perform functional squats 5 times continuously.

Alternate kneeling sequence 5 times each knee.

Climb 10 steps up and down 4 times (40 steps) continuously.

Climb 10 steps up and down 2 times (20 steps) while carrying 30 lbs. in one hand.

Rest 30 seconds after climbing with load.
