Job Summary Responsible for food preparation, greeting and attending guests in the dining area, cash handling, and serving food in accordance with departmental standards.

Essential Duties And Responsibilities

Greets each guest upon arrival; receives cash, credit cards, or comps from customers.

Obtains cash from Main Bank and sets up cash drawer prior to shift.

Ensures shift materials (register tape, pens, cookies, cups, paper supplies) are ready.

Computes bill accurately on cash register; makes correct change and issues receipt.

Closes register at end of shift, counts drawer, completes paperwork, and returns cash to main bank.

Prepares kitchen for service; maintains quality service standards; manages cost‑control measures.

Works varying positions: cooking, cashiering, serving, bussing, dishwashing.

Prepares medium‑complexity hot and cold food, sauces, butter, accompaniments, and garnishes per recipes.

Maintains knowledge of food preparation techniques, kitchen equipment operation, safety, sanitation laws.

Prepares entrees, vegetables, salads, burgers, desserts per prep sheets and recipes.

Coordinates advance prep, forecasts headcounts, ensures correct quantities.

Visually inspects all food; ensures plates are clean, appetizing, and presentation standards met.

Performs daily food temperature checks to ensure safety.

Stores food items properly at close of service; cleans work area and equipment.

Operates dishwashing machine every two hours; washes, rinses, and dries plates.

Sweeps and mops floors; cleans and dries pots, pans, utensils.

Removes trash during shift; cleans trashcans and returns them to dishwashing area.

Notifies F&B Manager of needed supplies for prep, dish area, dry storage.

Handles deliveries: stores after receipt.

Demonstrates knowledge of fire and departmental safety procedures; follows proper lifting and knife procedures.

Performs related duties as assigned.

Required Skills And Abilities

Excellent verbal and written communication skills.

Knowledge of gaming operations, rules, and regulations.

Ability to multi‑task.

Education And Experience

High school diploma or equivalent.

One to three years of related experience and/or training in related field.

Other combinations of education and experience may be considered.

Must obtain and maintain Serv‑Safe certification.

Must obtain and maintain a valid racing license.

Physical Requirements & Working Conditions

Must stand during shift; sit or stand, walk, use hands, reach, climb, bend, kneel, crouch, or crawl as required.

May be required to lift up to 50 pounds.

May work long hours, including nights, weekends, and holidays.

Noise level will be moderate to loud; environment may vary with crowds, noise, smoke.
