$25.76/hr - $30.30/hr (base pay range, actual pay will be based on skills and experience). Job Overview
The Demi Chef de Partie will ensure the highest quality preparation and presentation of all Lodge outlets, banquets, special parties and events. The role involves management of kitchen operations, adherence to culinary standards and consistent execution of menu items. Essential Duties & Responsibilities
Assign tasks to employees with team leader approval. Prepare cold and hot food items including sandwiches, salads, dressings, soups, sauces, and special menu items. Perform basic vegetable prep, meat, fish and starch handling. Master frying, grilling, baking, roasting, and poaching techniques. Create and maintain sauces such as saucier and butter sauces. Set up mise en place for multiple stations (Stillwater Grill, Tap Room, banquet stations). Maintain cleanliness of work areas, refrigerators, and equipment. Report faulty equipment or unsafe conditions to the team leader. Assist in menu reviews, revisions, and daily specials creation. Support training of new employees across Cook levels and collaborate with the butcher for inventory management. Contribute to cost efficiency, reduce waste, and ensure food freshness. Communicate effectively across front and back of house teams. Comply with Pebble Beach Company safety, health, and sanitation policies. Requirements
Minimum six years of kitchen experience, including two years in an equivalent position at a premier restaurant, resort or hotel. High school diploma or equivalent required. Proficient knife skills and knowledge of basic hot/cold food cooking. Ability to work in various kitchen stations and maintain quality standards. Desired Skills
Graduate of an accredited culinary program or apprenticeship. Benefits
