Location : The Grand Bohemian Charlotte, Autograph Collection, an AAA Four Diamond boutique hotel in Uptown Charlotte.
Position type : Hourly, Full-time (entry level).
Overview : The Cook prepares all food items for the restaurant, room service, employee cafeteria, and banquets, maintaining high standards of quality, cleanliness, sanitation, and food safety.
Responsibilities
Maintain cleanliness and organization of all storage areas.
Complete food and station preparation prior to opening.
Prepare and display buffet food items.
Recognize quality standards in fresh produce, fish, dairy and meats.
Maintain a clean and sanitary environment with proper handling, storage, and sanitation.
Prepare food for banquets pursuant to Banquet Event Orders.
Serve food for the Employee Cafeteria as directed by the Chef or Kitchen Supervisor.
Follow hotel recipe standards and prepare specials under direction.
Breakdown buffets and kitchen line, storing food and equipment properly after each meal period.
Work banquet food station as scheduled.
Know the location and operation of all fire extinguishing equipment.
Practice safe work habits to avoid injury.
Use Production Charts as specified by hotel standards.
Support any kitchen position as needed.
Follow all Health Department and company regulations regarding food and safety.
Operate and maintain cleanliness of all kitchen equipment.
Maintain a “Clean As You Go” policy.
Assist in storage and rotation of food items per hotel procedures.
Sign keys in/out under supervision as needed.
Qualifications
High school diploma or equivalent; experience in a hotel or related field preferred.
Culinary experience required.
Flexible and available for long hours as needed.
Ability to exert up to 50 pounds of force occasionally, or 20 pounds frequently.
Ability to stand for entire shift.
Ability to withstand temperature variations (hot and cold).
Thorough knowledge of menus and preparation as per hotel standards.
Proficiency in cooking techniques: charbroiling, poaching, deep‑frying, sauté, braising, roasting, and par‑cooking.
Knowledge of herbs, spices, and their proper use.
