Job Description

– Ensure that all Banquets and other Food and Beverage outlets maintain the required quantities of sanitized equipment and supplies to meet hotel business needs.

Responsibilities

Assist the Executive Steward in efficiently running the Steward Department and minimizing operating costs.

Execute company and hotel policies related to the Stewarding Department, ensuring performance standards and budgetary controls.

Advise the Executive Steward on all matters concerning the Stewarding Department.

Maintain a high standard of sanitation throughout Stewarding areas.

Prepare the Stewarding Department budget and control overheads, reporting variances to the Executive Steward with recommendations.

Collaborate on purchasing cleans supplies, china, glassware, cutlery, and equipment.

Manage storage, requisitioning, and inventory of all materials and equipment.

Report on breakages, cleaning supply consumption, and other operational matters.

Establish performance standards with the Executive Steward.

Maintain equipment (dishwashers, chafers, speed racks, etc.) and report defects to maintenance.

Perform all duties applicable to a departmental manager within the hotel.

Participate in the critical path task sheet for the Food and Beverage department.

Attend all required department meetings.

Schedule and control stewarding production staff, managing overtime and labor controls.

Oversee training and development of all stewarding staff, ensuring effective on‑ and off‑job training.

Maintain awareness of state legislation regarding employment and industrial relations.

Provide daily labor controls and payroll sign‑off.

Create weekly stewarding schedules with Executive Steward approval.

Qualifications

Customer Service experience, prior admin experience preferred.

Proficiency with Microsoft Word, Excel, Delphi or similar programs.

Excellent organizational, communication, and literature skills.

Minimum 5 years in an Executive Steward or Assistant Executive Steward role at a high‑volume facility.

Serve Safe certified Food Manager.

Ability to communicate with diverse associates and deliver in a multi‑lingual environment.

Bilingual communication skills (English/Spanish).

Demonstrated personal ownership, team building, and leadership skills.

Hands‑on management style with a can‑do attitude.

Strong customer service orientation and safety/sanitation skills.

Effective time management and detail orientation.

Enforces company policies and procedures, assumes responsibility and accountability.

Builds morale and fosters a professional work environment.

Physical Requirements

Ability to lift up to 60 pounds with ease.

Walking, standing, bending, lifting, and sitting for extended periods.

Working Environment

Interior of a hotel, all Food and Beverage areas, with exposure to humidity and extreme temperatures.

Exposure to hazardous cleaning chemicals.

Exposure to food items and beverages.

Tools and Equipment

Computer and accurate forecast reports.

Queen‑Mary cart, utility cart, glass rack dollies, til‑truck (trash cart).

Gloves, aprons, glass racks, flatware racks, and bus tub.

Mop bucket, mop, broom, dustpan, and floor squeegees.

Inventory scale.

Ware washer machine and chemicals.

China, flatware, and glassware.

Box truck.
