Work location: East Texas Treatment Facility, Henderson, Texas. This position is full-time with a 12-hour shift schedule and pay of $20 per hour. What you’ll do
Supervise correctional staff and offenders assigned to food service.
Maintain a clean, safe, and sanitary kitchen area including food preparation area, tools and equipment; assist in service and preparation of facility meals.
Essential Functions
Ensure dining, service, and food preparation areas and equipment are clean and sanitary; comply with sanitation, safety, and health regulations.
Inspect food for quantity, quality, and temperature; manage inventory storage and temperature logs.
Instruct staff and offenders on safety rules, sanitation, food preparation, portion control, equipment operation; advise on food requirements and recipes; manage food requisitions.
Manage portion controls and menus for special diet requirements; review cooks’ worksheets for accuracy.
Maintain accurate counts of kitchen tools; manage shift start/end counts of control items.
Plan, assign, and supervise work; review schedules; administer orientation and in-service training for staff and offenders.
Ensure counts are preformed accurately for all offenders assigned to food service.
Education and Experience Graduation from an accredited high school or equivalent (GED). One (1) year of full-time correctional, commercial, or institutional food preparation/food service management experience, or Eighteen (18) months of full-time correctional custody or law enforcement experience. Current SERV Safe Food Safety certification within twelve (12) months of employment; ongoing maintenance of certification. Valid driver’s license with acceptable driving record, unless waived by management.
Post Hire Requirements Must successfully complete annual in-service training and pass an annual background check, both of which must be approved by TDCJ.
