The Processing & Sanitation Manager is responsible for leading all overnight plant operations and sanitation activities to ensure our egg processing facility meets all food safety, quality, and regulatory standards. This role manages the 3rd shift production and sanitation team, ensuring equipment and processing environment are cleaned, sanitized, and ready for the next production cycle. The manager plays a critical role in maintaining compliance with USDA, FDA, and company food safety requirements while driving operational efficiency in a high-volume egg processing plant.

Key Responsibilities Operational Leadership

Oversee all plant activities during 3rd shift, including production, sanitation, maintenance coordination, and shipping/receiving as applicable.

Assign work schedules, monitor workflow, and ensure production and sanitation tasks are completed efficiently and on time.

Ensure all processing equipment is properly shut down, disassembled, cleaned, and reassembled according to SOPs.

Steward safe workers by following and enforcing safety regulations and policies.

Drive continuous improvement in plant operations, sanitation practices, and safety.

Serve as the on-site decision-maker for all operational and personnel issues during 3rd shift.

Partner with Quality Assurance to ensure the plant meets or exceeds all food safety and quality standards and ensures readiness for audits and inspections.

Provide leadership, coaching, and performance management for 3rd shift production and sanitation team.

Foster a culture of teamwork and accountability.

Sanitation Oversight

Lead, train, and supervise the team to execute thorough cleaning and sanitizing of equipment, tools, and facility areas.

Ensure sanitation activities meet USDA, FDA, GMP, SSOP, and HACCP requirements for egg processing operations.

Verify sanitation records, pre-operational inspections, and environmental testing are completed accurately and timely.

Monitor chemical usage, inventory, and handling for compliance with safety and regulatory requirements.

Troubleshoot sanitation-related issues and coordinate corrective actions with maintenance and quality teams.

Qualifications

3+ years of operational and/or sanitation experience – ideally in food processing facilities

Leadership experience

Excellent organizational, communication, and leadership skills

Strong knowledge of USDA regulations, GMPs, SSOPs, HACCP, and sanitation best practices

Ability to identify issues, propose solutions, implement process improvements, and monitor and adjust based on results

Ability to adjust to changing circumstances and work in a fast-paced environment

Ability to work overnight

Bilingual (English/Spanish) a plus
