Basic Purpose Positions in this job family are assigned responsibilities involving planning, coordination and direction of the operation of a food service department in a state hospital, school, facility or institution. This involves planning and coordinating the preparation, cooking and serving of food, coordinating and reviewing projected menu plans with nutrition therapists, including nutritional assessments and care plans, and requisitioning food, supplies and equipment.

Typical Functions

Plans, coordinates or directs purchasing, food planning, preparation and serving, inventory, cleaning and maintenance of sanitary standards in the preparation areas, kitchen, serving and dining areas of the department.

Prepares work schedules for employees and patients.

Reviews menus and makes changes; plans menus and prepares projected menu plans; interprets recipes, modified diet plans and proper portion control in accordance with approved policy.

Conducts staff meetings; attends staffing conferences and makes recommendations concerning operations.

Maintains necessary records and prepares required reports.

Analyzes food costs; assists with departmental budget issues.

Level Descriptor At this level, employees are responsible for the overall direction and coordination of the operation of a food service department of limited size or assist in a larger department. Responsibilities include supervision of assigned staff (including employees, inmates, students, patients), requisitioning produce and equipment, receiving shipments, storing food, inventory planning and supervising the serving of special meals.

Education and Experience Associate's degree in culinary arts, food management or similar field and one year of supervisory experience in a commercial or institutional food service environment. If education is reduced, each year of education may be substituted with one additional year of experience. One year of supervisory or inmate supervision is required; no substitution allowed.

Knowledge, Skills, Abilities and Competencies Knowledge of requisition and inventory records; food service organization and operation; food preparation and modified diets; safety hazards and precautions; sanitation methods; food storage; menu planning and recipe interpretation; standard cooking weights and measures; training principles. Ability to interpret and prepare special dietary menus, establish effective working relationships, give and follow oral and written instructions, and organize and supervise others.

Special Requirements Upon appointment, incumbents must complete required Departmental sponsored case management training: Certified Behavioral Health Case Manager – Adult, Child, Adolescent and Family, or Dual Certification. Physical examination required, with ability to occasionally lift/carry 50 pounds and push/pull maximum force of 25 pounds. Some agencies classify positions as safety sensitive per O.S. 63.
