Basic Purpose Position involves handling, preparing, cooking and serving food for regular, modified and special diets at state hospitals, schools, facilities, or institutions, while maintaining clean and sanitary work areas. Typical Functions Prepare foods, salads, desserts; cook or bake a variety of items. Supply unit with meats, fish, fowl as ordered; cut and prepare meat, poultry or fish. Clean and prepare foods using knives, slicers, peelers and ovens, steamers; follow written diet orders. Operate dishwasher; wash, scour pots, pans, dishes, silverware and other utensils. Remove refuse; sweep, mop, scrub kitchen, dining, and storage areas. Label, load, deliver food carts or trays; pick up trays after use. Defrost and clean refrigerators, walk‑in coolers, and related equipment. Operate state‑owned cars, vans, or other motorized transportation. Level Descriptor Employees are responsible for preparing and serving meals, using cooking equipment, cutting and preparing meats, frying or roasting foods, directing others performing routine duties, recommending future food needs, and maintaining cleanliness. Education and Experience One year of experience in a commercial or institutional food service, or one year of vocational or technical food‑preparation training. Knowledge, Skills, Abilities and Competencies Basic food preparation techniques, food service operations, sanitation practices, basic mathematics. Ingredient selection for baking and cooking; recipe usage; weights and measures. Operation of kitchen equipment and utensils; meat storage and preparation. Sanitary and health standards; ability to follow oral and written instructions; establish working relationships. Direct food service personnel; use knives to cut cut meat and other foods.
