The Florian is a modern supper club with a focus on prime rib, classic cocktails, and a thoughtfully curated wine list conveniently located on the third floor of the Lyric Opera House.
Responsibilities :
- Assisting in preparing meal ingredients, which includes washing, peeling, cutting, and slicing fruits and vegetables as well as marinating meats.
- Preparing soups, salads, and sauces as instructed by the Executive Chef/Sous Chef
- Plating and garnishing meal items in accordance with the instructions provided by the Executive Chef/Sous Chef
- Prepare food orders in a timely and organized manner.
- Oversees the preparation of Family Meal.
- Ensuring that all cooking stations are adequately stocked with the necessary meal ingredients and cooking equipment. - Fills out Toast Count Sheets and gives them to the Executive Chef/Sous Chef at BOH preshift.
- Ensuring that all cooking stations and kitchen surfaces are cleaned and disinfected before and after each shift.
- Adhering to standard food rotation practices to reduce food wastage and minimize the risk of contamination.
- Filling out the waste log.
- Assessing the quality of delivered food supplies to ensure that it meets restaurant standards.
- Checking in and putting away orders. Organizing Coolers and Freezers and practicing FIFO. (Dishwashers may assist in putting away orders as well).
- Able to work all kitchen stations in the absence of or tardiness of cooks, dishwashers or other kitchen staff members
- Ability to open and close the kitchen.
- Check stock of prepared items at the end of day and with the help of the closing cooks create a comprehensive prep list for service the following morning
- Ensures proper rotation and storage of all products.
- Bilingual in both Spanish and English is highly preferred.
