Compensation: $47,757.00 annually.

Schedule: Full‑time with variable work hours (5 AM–1 PM; 7 AM–3 PM).

Responsibilities

Receive training and mentoring from a higher‑level Meat Inspector and assist in inspections of registered meat plants, private commercial slaughter, and custom‑exempt facilities.

Perform ante‑mortem and post‑mortem inspections of carcasses, enforce state and federal sanitation, humane slaughter, and food‑safety policies.

Conduct visual examinations of live animals prior to slaughter, identify abnormalities, and contact the veterinarian for disposition of unhealthy animals.

Determine the age of beef through dentition for cattle 30 months or older to address BSE concerns.

Inspect head, lymph nodes, viscera, carcass and offal for pathological conditions.

Inspect equipment, facilities, and personnel to ensure sanitary levels; halt production for non‑compliance.

Ensure proper disposition of unfit products, enforce dressing procedures, and manage carcass branding.

Learn and assist with labeling requirements, labeling review, and product formulations.

Check formulation compliance with federal regulations and monitor inspection procedures for meat product production.

Learn sampling procedures and assist with product sampling for microbiological testing.

Ensure microbial testing for generic E. coli in slaughter plants.

Document verification results and navigate the Public Health Information System (PHIS).

Assist in re‑inspection and critical‑control‑point monitoring of meat and poultry processing.

Prepare and maintain required records, reports, and certifications related to condemnations and corrections.

Assist in industry quality‑control programs and analyze deviation reports.

Attend training courses, refresher seminars, and on‑job training.

Qualifications

1 course in animal science, agribusiness, or food business management.

OR 3 months experience in livestock industry or industrial meat & poultry processing.

AND 1 course in biological sciences or chemistry.

AND must provide own transportation.

OR equivalent minimum class qualifications as noted above.

Additional Requirements Unusual Working Conditions:

Flexible shifts, travel, possible overnight stays, weekend work, rotating 6‑month shifts, exposure to extreme temperatures, slippery surfaces, climbing stairs or ladders, catwalks or power lift platforms, potential injury from animals, extended standing, working around machinery, risk of injuries from inmates, exposure to animal waste or infectious disease, loud equipment.

Applicants must undertake a color‑deficiency test before the interview; failure will result in disqualification.
