Job Summary:

The Long Term Care Senior Cook performs a variety of duties in the production of food that supports patient/resident care. They execute meal service based on prescribed patient/resident diets, prepare, cook, season, and portion food for patients/residents, staff, and visitors of the designated facility, and serve food within the guidelines of menu and dietary requirements. They must adhere to food quality standards of appearance, taste, temperature, and sanitation, perform washing and cleaning duties to ensure sanitation and cleanliness in cooking and serving areas, and maintain labeling and storage of food, equipment, and machinery. They provide the highest quality and safest food possible, work with many internal customers, and require above average communication and excellent teamwork skills. They operate a wide range of kitchen equipment, follow standardized recipes and HACCP guidelines, document HACCP steps, temperatures, and outcomes, and may work independently as needed. They demonstrate knowledge of food safety and sanitation processes and possess basic math skills for measuring ingredients.

Responsibilities

Prepare, cook, season, and portion food for patients/residents, staff, and visitors according to dietary prescriptions and menu guidelines.

Maintain food quality standards of appearance, taste, temperature, and sanitation.

Perform washing, cleaning, and sanitation duties in cooking and serving areas.

Label and store food, equipment, and machinery properly.

Operate kitchen equipment such as mixers, slicers, kettles, ovens, stoves, induction burners, grills, deep-fat fryers, knives, dishwashers, garbage disposals, refrigerators, and freezers.

Follow standardized recipes and Hazard Analysis Critical Control Point (HACCP) guidelines; document HACCP steps, temperatures, and outcomes.

Work independently when necessary and collaborate with internal customers using effective communication and teamwork.

Care for food safety and sanitation processes; use basic math skills for measuring ingredients.

Remain on feet for the majority of the day and walk long distances within the facility.

Qualifications

High school diploma or equivalent preferred.

Reading, writing, and following oral and written directions.

At least one year of previous cooking experience; experience with therapeutic diets preferred.

Strong restaurant line-cooking skills to ensure timely, coordinated food preparation.

ServSafe certification may be required; must fulfill continuing education and mandatory in-services.

Participation in departmental meetings, safety education, therapeutic diet training, and other occupational requirements.
