Stewarding Supervisor

Stewarding Supervisor oversees all Banquet, Kitchen, Restaurant inventory of China, Glass, Silver, kitchen equipment and smallware, and all dish‑wash and cleaning supplies, while directly overseeing the functionality of Stewarding and Dishwash areas. Position works in coordination with Chefs and F&B Leaders as support to ensure quality, consistency and presentation of all Food & Beverage and the proper dish and glassware is available and maintained. The Stewarding Lead must possess excellent organization, communication and supervisory skills and excellent understanding and ability to manage and use available resources. Coordinate with Chef, Banquet Leadership, apart from F&B Outlet Leaders on stewarding needs and scheduling. The role directly oversees the Dishwash and Steward areas and the day to day operations. Supervise and direct day‑to‑day running of the stewarding department.
Assist with regular inventory, control of all equipment and chemicals and cleaning of all stewarding areas.
Essential Functions Of The Position
Direct and supervise personnel
Hands‑on leader, able to jump in as a Dishwasher or Steward as and when required
Communicate verbally clearly and hold people accountable
Oversee all Kitchen, Banquet, Restaurant equipment and China‑Glass‑Silver inventory
Audit and maintain all sanitation standards for all F&B Areas
Comply with all sanitation standards and health department regulations as outlined in training manual
Comply with and enforce all Steritech policies and procedures
Comply with grooming standards as outlined in hourly employee handbook and training manual for kitchen employees (hair must be restrained, no jewelry allowed)
Knowledge of proper use for chemicals in the Stewarding department; assist with Banquet plate‑ups; understand and execute all BEO needs
Work with Banquet Chef(s) and Banquet Manager/Director to coordinate all event function requirements and set‑ups as assigned in BEO
Function as a liaison between EcoLab, Ovenight and other Temp agencies
Ensure proper functioning of all Dish/ Glass washing equipment, report and seek maintenance as necessary
Order chemicals, safely mix chemicals and control chemical usage
Ownership of all chemicals, equipment and CGS
Follow safety procedures to ensure a safe working environment
Member of Safety Team
Basic knowledge of disassembling, cleaning and reassembling kitchen equipment
Review and control daily and weekly labor schedules and costs
Perform quarterly inventories
