Job Description – Pastry Apprentice

n

The Pastry Apprentice is responsible for the following:

n

Overall Execution of the Bakery items, Quality of the baked goods, Preparation amp; Presentation and Flavor of the Bakery Foods, and promoting a happy, healthy cohesive and Professional work environment.

n

The Pastry Apprentice position is eligible to enter the ACF Pastry Certification Program. This program will give the apprentice the ability to earn a certificate signifying that that he/ she is proficient in the major areas of bakery production. This online program requires a 15 month commitment.

n

a) Artisan Breads

n

b) Laminated doughs for Croissant

n

c) Sauces and compotes

n

d) Layer cakes

n

e) Cheesecakes and Tarts and Pies

n

f) Cookies and Brownies

n

g) Basic Sanitation

n

Pastry Apprentice held accountable to:

n

a) Daily Production List is organized, executed, and Followed through.

n

b) Daily Cleaning expectations and end of Shift Closeout.

n

Cleanliness

n

a) Team Members are held accountable to daily cleaning and end of shift Check out process.

n

b) Kitchen Closing list has been completed

n

c) Monthly deep cleaning has been organized, delegated, and followed through.

n

d) Team Members are following ServeSafe and Health Department Standards.

n

Promoting a Happy, Healthy, Cohesive and Professional work environment.

n

a) The Pastry Apprentice promotes these qualities by modeling a positive “ Can Do” attitude.
