Position Summary:

n

Under general supervision, supervises and oversees the kitchen and trains staff; plans and prepares nutritious, well-balanced meals. Maintains cleanliness of food preparation areas, kitchen, utensils and equipment.

n

The work is normally reviewed upon completion, with occasional spot checks while in process, to ensure accuracy, timeliness and conformance to established standards; major work tasks are covered by instructions or procedures and unusual situations are referred to a supervisor.

Essential Duties and Responsibilities: (Depending on area of assignment, incumbent may not be required to perform some of the duties listed below.):

  • Leads and trains cooks, prepares, cooks and serves meals and cleans kitchen and dining area.
  • n
  • Plans and prepares well-balanced, nutritious meals and snacks according to established policies, procedures, and nutritional guidelines.
  • n
  • Prepares and adheres to weekly menus, including documenting any substitutions to the menus.
  • n
  • Stores, labels, and dates food properly.
  • n
  • Submits monthly food reports, daily meal counts, and food service reports on a timely basis.
  • n
  • Orders food and foodservice related items to ensure that adequate supplies are available at all times.
  • n
  • Ensures safety guidelines and other applicable procedures are applied in the food preparation and dining areas.
  • n
  • Maintains a safe and healthy environment in accordance with established policies, procedures, and regulations.
  • n
  • Inspects kitchen to ensure safety measures are practiced continually.
  • n
  • Cleans and sanitizes kitchen and dining areas.
  • n
  • Washes and dries pots, pans, eating utensils, and other cooking equipment.
  • n
  • Ensures the safe usage and security of culinary equipment.
  • n
  • Ensures timely delivery of prepared food products.
  • n
  • Performs other job related duties as assigned and contributes to a team effort.

  • Knowledge of the Tohono O'odham culture, customs, and traditions.
  • n
  • Knowledge of applicable federal, state, tribal laws, regulations and requirements.
  • n
  • Knowledge of how to prepare well-balance and nutritious meals.
  • n
  • Knowledge of proper and safe food handling, storage, and disposal requirements.
  • n
  • Knowledge of methods and procedures of quantity food preparation; kitchen sanitation and safe food storage practices.
  • n
  • Knowledge of use and care of cooking equipment and utensils; kitchen safety and basic math.
  • n
  • Skill in preparing food for large groups of people.
  • n
  • Skill in handling sharp knives, and other cutting utensils.
  • n
  • Skill in providing superior customer service to external and internal customers.
  • n
  • Ability to safely operate various cooking equipment and kitchen appliances.
  • n
  • Ability to lead and kitchen staff.
  • n
  • Ability to work extended hours and various work schedules.
  • n
  • Ability to communicate efficiently and effectively both verbally and in writing.

  • Ability to establish and maintain positive and effective working relationships with other employees and the general public.

Minimum Qualifications:

n

High School Diploma or General Education Diploma and three years' work experience in food preparation.

n

Licenses, Certifications, Special Requirements:

n
    n
  • Must obtain certifications in Cardio Pulmonary Resuscitation (CPR), Automated External Defibrillator (AED) and First Aid within the first six months of hire.
  • n
  • Food Handler's card must be obtained within six months after hire.
  • n
  • Upon recommendation for hire, a criminal background and National FBI check is required to determine suitability for hire, including a 39-month Motor Vehicle Record.
  • n
  • May require possessing and maintaining a valid driver's license, (no DUIs or major traffic citations within the last three years).
  • n
  • If required, must meet the Tohono O'odham Nation tribal employer's insurance requirements to receive a driver's permit to operate program vehicles.
  • n
  • Based on the department's needs, incumbents may be required to demonstrate fluency in both the Tohono O'odham Language and English as a condition of employment.
