Description

Tahoe Donner Association is looking for a qualified,

intermediate level cook

to join our Food and Beverage Team! The Cook II position is primarily responsible for performing all levels of food preparation, which may include ingredient preparation and maintaining a specific station with others and/or individually based on standardized recipes, plating or instruction. All duties are to be performed in accordance with departmental and property policies, practices and procedures. Responsibilities may include areas such as Garde manage, fryer, saut, middle or other instructed areas.

ESSENTIAL FUNCTIONS

Completes opening duties such as setting up workstation with required place, tools, equipment and supplies; inspecting the cleanliness and working condition of all tools, equipment and supplies; checking production schedule and pars; establishing priority items for the day; and informing the Kitchen Supervisor, Sous Chef or Executive Chef of any supplies that need to be requisitioned for the day's tasks. Assists the Cook I and Cook III in execution of service. Prepares all menu items accurately per recipe guidelines, including conversion capabilities and understands mis en place expectations. May supervise the work of prep cooks and cook I as required. Participates in on-the-job and classroom instruction. Assists in serving and dispensing food products as assigned. Follows and re-enforces policies and procedures regarding the proper handling, sanitation and dispensing of food and beverage products.

Qualifications

We are looking for the following qualifications:

Working knowledge of kitchen sanitation and safety measures. Knowledge of food handling sanitation. Knowledge of principles, procedures and equipment used in the storage, care, preparation, cooking and dispensing of food in large quantity. Knowledge of methods and procedures used in the operations, cleaning and care of utensils, equipment and work areas. Ability to prepare and cook all food groups. Follow oral and written instructions and keep records. Lift an average of 50 lbs. if required in the job. Read and write at a level appropriate to the position. Ability to cooperate and work well with others. Ability to cooperate and work well with others. Ability to maintain a clean and neat personal appearance.

These skills and abilities are typically acquired through the completion of a high school diploma or equivalent and two years of experience performing the duties of a cook or prep cook and/or training in culinary science or an equivalent combination of formal training, education and experience which demonstrates the ability to perform all of the duties of the position.
