Clyde’s Restaurant Group is seeking a talented Executive Chef to lead the kitchen at Cordelia Fishbar, our newest concept and one of DC’s most exciting contemporary dining destinations.

Located in the heart of Union Market, Cordelia Fishbar draws inspiration from the dynamic culinary traditions of Spain, Portugal, Asia, and the Americas—regions celebrated for their use of high-heat charcoal to unlock the best flavors from seafood.

WHAT WE LOOK FOR IN AN EXECUTIVE CHEF

Dedicated, detail-oriented, and hospitality-focused, with a commitment to excellence and consistently upholding the highest standards of service. Over two years of experience as an Executive Chef in a seafood-focused restaurant. Able to lead and respond efficiently to unanticipated problems. Computer literate; proficient in Microsoft Suite. Excellent verbal and written communication skills. Creative thinker who provides guests with exceptional service and value. Demonstrated culinary skill in translating concept to execution through thoughtful menu development, precise preparation, and consistent production. Disciplined and firm about performance standards, yet fair and personable in developing employees.

WHAT YOU WILL DO AS AN EXECUTIVE CHEF

Lead kitchen operations by setting high standards in food preparation, production, and presentation while fostering a strong, motivated team. Supervise and delegate food preparation, ensuring smooth service and efficient execution across both FOH and HOH teams. Drive financial performance by managing inventory, portion control, and food costs to meet or exceed budgeted goals. Control labor costs through strategic scheduling and monitoring reports to ensure profitability. Work with the Director of Culinary to develop and refine menus, balancing creativity, quality, and cost-effectiveness while ensuring POS programming accuracy. Lead recruitment, training, and development of a high-performing kitchen team, promoting skills, efficiency, and engagement. Conduct menu training for FOH and HOH teams, reinforcing consistency and excellence through ongoing staff development. Ensure compliance with health, safety, and sanitation standards, coordinating corrective actions as necessary. Manage equipment maintenance and repairs, ensuring a safe and functional kitchen environment. Promote a positive and collaborative work environment by embodying Courtesy, Dignity, and Respect, encouraging open communication and teamwork to strengthen morale and retain top talent.
