JOB DESCRIPTION
Sunny’s is the highly anticipated restaurant and bar from the team behind Miami’s award-winning Jaguar Sun and Sunny’s Someday Steakhouse residency at Lot 6. Located in Littler River, Sunny’s Someday Steakhouse began as Jaguar Sun’s response to the pandemic and quickly became one of Miami’s hottest reservations. The residency scored a coveted “Best Restaurant in America” accolade from Bon Appetit and was named a Tales of the Cocktail “Spirited Award” Regional Honoree. In addition to world class food and beverage, Sunny’s will deliver a nightly dinner party that needs to be felt to be believed.
The Sunny’s food menu will boast raw bar selections, wood-fired proteins, and steakhouse classics, alongside hand-made pastas and salads. On the beverage side, the team has created a substantial wine list spanning the traditional to the more adventurous and obscure. Sunny's will also be pouring classic and house cocktails, in addition to adding two brand new cocktail menus: a pick-your-path martini menu and a zero-proof drinks menu. The design of Sunny’s is a modern interpretation of the white table-clothed steakhouse, with a light-filled 76-seat indoor dining space, private dining room, U-shaped dining bar, and expansive, 3,000 square-foot, Banyan-Tree-canopied patio with outdoor seating.
The Barback position is responsible for ensuring that all bar operations are supported. Principle responsibilities include juicing, managing supplies like batches, syrups, ice, and glassware, and ensuring that bartenders have everything they need to provide memorable experiences while maintaining high volumes. Ideal candidates are motivated to continue to learn and grow with the company, but we are also happy to bring along candidates who are more comfortable staying inside a single position. Our most sucessfull candidates are enthusiastic about classic cocktails, have a committed work ethic, and are comfortable working with a team. Our most successful hires understand that it is possible to take the work more seriously than we take ourselves.
Barbacks at Sunny's are expected to be able to help host a nightly dinner party, which means simultaneously keeping up on service bar, taking guests through multi-course dinners, and commanding a deep knowledge of spirits and cocktails, all while keeping the energy in the room as festive as possible.
RESPONSIBILITIES
Include, but not limited to:
- Oversee daily operations and lead the team in providing memorable experiences for all guests
- Uphold a team culture that promotes an exceptional working environment
- Participates in the daily operations as a floor manager including responsibilities such as opening or closing
- Engage guests in selecting beverage and curating a fun and exciting dining experience
- Build a following for Sunny’s as a destination to enjoy and experience beverage menus
- Educate the service team on beverage offerings and steps of service
- Curate and maintain the wine list and actively seek areas of improvement & growth
- Ensure that all POS systems are accurate and understood by team members
- Complete inventory, reports, and invoicing accurately and efficiently
- Establish meaningful partnerships with vendors
- Ensure compliance with HR, DOH, DOL, and building safety measures
- Other duties as assigned
QUALIFICATIONS
- English fluency and additional languages preferred, but not required
- Ability to stand or walk for long periods of time
- Ability to balance & carry multiple plates, glass racks and or/glasses, and lift objects up to 40+ lbs.
- Ability to work nights, weekends and holidays, and variable schedule per the needs of the business
