nPosition Summary:
nPrep Cooks are responsible for the daily preparation of food items used in the kitchen. Assists cooks in preparing breakfast, lunch and dinner at the Lodge. May be assigned to cook pizza and fry bread. Responsible for prepping and cooking food in a safe and healthy manner, using proper food handling and sanitation procedures and quantity and quality control in food production. Performs routine daily cleaning, maintains and operates equipment properly and follows FIFO rotation of products.
nKnowledge and Abilities:
nAbility to understand basic prep and cooking procedures, such as sauté, broil, pan and deep fry while observing sound health and sanitation practices.
nAbility to communicate well and interact with guests and staff in a clear concise manner.
nAbility to provide outstanding customer service by providing prompt, courteous and accurate service.
nAbility to load and unload delivery trucks and handle inventory of items required.
nAbility to work in a team environment, multi-task efficiently and maintain positive working relationships.
nAbility to perform tasks such as washing dishes, sweeping, collecting trash, busing tables, mopping of floors and organizing walk-ins and storage areas.
nDuties & Responsibilities:
nResponsible for daily preparation of food items to be used in the kitchen. Assist cooks in preparing meals and food items like pizza, fry bread, soups and salads, while observing sound health and sanitation practices such as proper hand washing, avoiding cross contamination, monitoring food temperatures and proper sanitation of utensils and cooking surfaces. Complete temperature or stock logs.
nMaintain and operate kitchen equipment properly.
nOrganize walk-ins and storage areas, monitoring stock levels of food items.
nWash dishes, sweep floor, bus tables, handle trash collection and mop floors as assigned throughout shift.
nLoad and unload delivery trucks and handle inventory using FIFO rotation method. Ensure kitchen is clean and stocked at all times.
nPerform other work-related duties as assigned.Qualifications:
nGood oral communication skills.
nHigh School Diploma or GED.
nAbility to lift up to 50 pounds.
nPrior cooking or serving experience working in fast food or a restaurant preferred.
nCurrent Food Handlers’ card.
nPreference given to Hualapai Tribal members.Working Conditions:
nKitchen environment with exposure to heat. Must be able to work extended periods while standing. Must be able to lift 50 lbs. Must be able to work varying schedules, weekends and holidays.
