Position Overview We are seeking a dynamic, polished, and service-driven Director of Restaurants and Bars to oversee the operations of all food & beverage outlets across the property. This leader will be responsible for ensuring excellence in service, team performance, and operational efficiency across Merois, in-room dining, our bar outlets, and any future F&B activations. Key Responsibilities Oversee daily operations of Merois by Wolfgang Puck, in-room dining, bar outlets, and private events Partner with Wolfgang Puck Fine Dining Group to uphold brand standards, service execution, and training Lead and inspire all restaurant and bar teams through hands-on guidance, communication, and development Manage scheduling, training, performance reviews, and employee engagement across F&B departments Monitor service flow, financial performance (labor, food/beverage cost), and guest satisfaction metrics Address guest feedback and service challenges with professionalism and poise Collaborate on promotions, seasonal offerings, and unique activations that reflect the brand identity Maintain compliance with health, safety, and hospitality standards Foster a culture of excellence, creativity, and genuine hospitality across all touchpoints Preferred Qualifications 3+ years of experience in a senior food & beverage leadership role in a luxury hotel or fine dining setting Strong knowledge of food and beverage trends, wine service, and guest engagement Demonstrated success in leading large teams and driving operational excellence A warm, professional demeanor with excellent communication and problem-solving skills Experience working with or alongside a celebrity chef or branded restaurant group is a strong plus Ability to lead with presence, poise, and passion on the floor Flexible schedule and ability to lead across multiple dayparts and outlets Compensation & Benefits Salary Range: $95,000
