POSITION: Bar Prep
EMPLOYMENT CLASSIFICATION: Non-Exempt
REPORTS TO: General Manager, Assistant General Manager, Bar Manager, Dining Room Manager, Lead Bartender, Bartender
PURPOSE:
The Bar Prep candidate is expected to take a proactive approach to their roles, ensuring the bar is always prepared for seamless operation. By maintaining accurate records, adhering to protocols, and communicating effectively, the Bar Prep team will play a vital role in delivering an exceptional guest experience.
KEY RESPONSIBILITES:

Primary Responsibilities:
Liquor Management:
- Accepting Liquor Orders:
- Receive liquor and wine deliveries, cross-checking against purchase orders for accuracy in quantity, type, and quality.
- Record any discrepancies or damages and communicate them to the bar manager immediately.
- Transport liquor and wine t o designated storage areas, ensuring secure placement and proper labeling.
- Restocking Liquor:
- Restock storage areas daily based on the pars set for each shift and ensure all stations are equipped with necessary bottles.
- Rotate liquo r and prep stock following FIFO (First In, First Out) to maintain freshness and minimize waste.
- Monitor storage areas for cleanliness, organization, and safety, reporting any issues to management.
Produce and Bar Consumables Ordering:
- Inventory Review:
- Conduct a daily review of produce (e.g., limes, lemons, oranges) and consumables (e.g., napkins, straws, syrups) to assess current stock levels.
- Update inventory sheets to reflect current stock, usage, and reorder needs.
- Order Submission:
- Compile detailed order requests, ensuring accuracy and alignment with the bar's weekly needs.
- Submit orders to the designated manager or vendor by the set deadline to avoid service interruptions.
- Verify incoming orders for quality and freshness and properly store items upon receipt.
Batch Preparation:
- Batching Process:
- Follow standardized recipes to prepare all batch es and batch bottles, using proper measurements and mixing techniques.
- Double-check the quality and consistency of each batch before bottling.
- Label and date each bottle, noting preparation details for tracking and rotation including initials of preparer.
- Storage and Monitoring:
- Ensure all batch bottles are stored in the designated area, easily accessible to bartenders during service.
- Track usage and communicate any low inventory to the bar manager promptly.
Bar Setup for Service:
- Station Preparation:
- Inspect all bar stations to ensure they meet pars for liquor, mixers, garnishes, glassware, and bar tools.
- Set up garnish trays , batch bottles , bottled martinis and necessary tools at each station.
Daily Cleaning and Maintenance:
- Organizing Storage:
- Keep liquor shelves, coolers, and storage areas clean, organized, and stocked.
- Unpack wines and store neatly in the wine room.
- Dispose of expired or damaged stock according to bar protocols with tracking of disposed items given to bar manager weekly.
- Sanitization:
- Sanitize all tools, equipment, and surfaces used during prep, following health and safety guidelines.
- Ensure that prep areas are clean and ready for the next day's work.
