About the Role
Lolita is a vibrant, high-energy cocktail bar and restaurant known for bold flavors, striking design, and an unforgettable guest experience. We’re looking for an Assistant General Manager who thrives in the energy of service, leads with confidence and grace, and has the operational skills to keep the business running smoothly behind the scenes.

What You’ll Do
Leadership & Guest Experience
- Lead with warmth, professionalism, and presence—ensuring every guest feels valued and every service flows seamlessly.
- Manage daily FOH operations, overseeing servers, hosts, runners, and bartenders.
- Partner with the Executive Chef and Beverage Director to ensure a smooth connection between FOH and BOH.
- Support hiring, training, scheduling, coaching, and professional development for FOH team members.
- Be the on-shift problem solver, addressing guest concerns and operational challenges in real time.
Operational & Administrative Management
- Oversee staff scheduling to optimize coverage and labor costs.
- Maintain and update QuickBooks for accurate accounting and expense tracking.
- Manage monthly bill payments and vendor accounts.
- Prepare and review monthly Profit & Loss (P&L) statements , identifying areas for improvement.
- Process payroll accurately and on time.
- Use TripleSeat for private event and large-party booking management, including coordination with clients and internal teams.
- Oversee POS updates, end-of-shift reconciliations, and supply ordering.
- Monitor compliance with all health, safety, and sanitation regulations.
Team Communication & Development
- Lead pre-shift meetings and departmental trainings to share menu updates, service priorities, and event details.
- Encourage a culture of positivity, accountability, and continuous learning.
- Maintain strong communication between FOH and BOH teams.
What We’re Looking For
- Experience: 2+ years in a restaurant management role (high-volume, upscale or cocktail-forward concepts preferred).
- Skill Set: Strong financial literacy, scheduling expertise, QuickBooks and payroll experience, and familiarity with TripleSeat.
- Mindset: Organized, detail-oriented, and calm under pressure in a fast-paced environment.
- Leadership Style: Approachable, inspiring, and able to motivate a diverse team.
- Availability: Evenings, weekends, and holidays as required; able to close 2–3 nights per week.
