General Manager Position Summary The Meritage Resort in Napa Valley is seeking an experienced and forward-thinking Director of Food & Beverage to lead and elevate a broad, dynamic F&B operation. This role oversees a diverse portfolio that includes two full-service restaurants, two cafes, two bars, a mobile food truck program, high-volume banquets and catering, and an on-site concert series. The Director will lead both front-of-house and culinary teams, with a focus on driving revenue, enhancing guest experiences, maintaining cost control, and fostering a strong team culture. Key Responsibilities Strategic Leadership Develop and execute a comprehensive food and beverage strategy aligned with resort goals Identify opportunities to innovate menus, concepts, and guest experiences across all outlets Collaborate with Marketing to increase visibility and engagement with concerts, culinary events, and food truck activations Operational Oversight Manage daily operations across all venues, including restaurants, bars, cafes, catering, and mobile units Maintain high standards of service, food quality, safety, and brand consistency Implement systems to improve efficiency, optimize labor, and ensure consistency across offerings Create and manage departmental budgets, forecasts, and financial reports Control labor, food, and beverage costs while maximizing profitability Oversee vendor relationships and procurement strategies to balance quality and expense Lead and develop a multi-disciplinary team across front-of-house and culinary operations Mentor department leaders with clear performance goals and development plans Foster a culture of accountability, collaboration, and continuous improvement Guest Experience Act as the face of all food and beverage offerings Promote a guest-focused service culture reflective of the Napa Valley region Work closely with other departments—Rooms, Spa, Sales, and Events—to ensure seamless guest experiences Concert Series and Events Partner with event producers and the marketing team to grow the on-site concert series Oversee food and beverage planning, staffing, and execution for concerts and private events Ensure activations are both revenue-positive and aligned with guest satisfaction and safety Qualifications 7+ years of progressive F&B leadership experience, ideally within hotels, resorts, or high-volume venues Proven success managing multiple outlets and large-scale banquet operations Strong leadership skills in both culinary and FOH environments High level of financial acumen, including budget creation and cost control Experience with entertainment-based events or large-scale activations preferred Committed to guest satisfaction, team development, and sustainable business practices Degree in Hospitality, Culinary Arts, or Business preferred The Meritage Resort & Spa, Napa, California, United States of America
