General Manager role at Paulie Gee's Logan Square in Chicago, IL. The GM will collaborate with the leadership/administrative team on projects and serve as a strong representative of the company. Responsibilities
Demonstrates effective leadership in running a profitable business Oversees pizza preparation start-to-finish (wood-fired Neapolitan and Detroit styles), including dough batches, basic ingredients, dough stretching, topping, firing, and finishing Work the line and execute high-quality pizzas and other primary items (salads, etc.) Support multiple front-of-house roles (Host, Busser, Server, Bartender) to back up operations Interact with guests daily to monitor quality of service and food and cultivate repeat business Ensure food quality meets defined standards Utilize POS to run required reports for tax purposes and ensure timely, accurate payroll and tax payments Input payroll accurately on a bi-weekly basis Address operational issues at PGLS (e.g., staffing, facilities) as needed Engage with PGLS social media accounts with regular content and timely responses Post cadence: at least one Instagram feed post per day, at least 3 video reels per week cross-posted to Facebook, and at least two Instagram stories per day Respond to social media engagement/comments in a timely manner Be aware that social media programs may change with notice Conduct inventory counts and manage ordering to prevent shortages and minimize waste Provide monthly profit and loss reports to the majority partner, with quarterly investor reports Hold staff meetings at least quarterly to discuss performance, improvements, and upcoming events Maintain cleanliness standards compliant with City of Chicago health and safety guidelines Maintain permits/certifications for staff and ensure compliance with Illinois and City requirements Maintain HR files for employees (applications, permits, certifications, reviews, etc.) Establish and review opening/closing lists for safety and cleanliness; hold staff accountable Utilize Restaurant Systems Pro for labor planning, inventory management, and cost controls Perform other duties as assigned Qualifications
Previous experience in food service or related fields Previous experience as an AGM or GM of a full-service restaurant for at least 2 years Strong leadership qualities Ability to thrive in a fast-paced environment Excellent written and verbal communication skills Strong attention to detail Enjoys creating memorable guest experiences Pay Structure and Benefits
