JOB TITLE : Meat Cutter/Butcher EMPLOYEE TYPE: Full-time employee JOB PURPOSE: The employee is this position is responsible for performing butchering and meat processing tasks. The Meat Cutter/Butcher reports to the Butcher Supervisor. T&E Meats is the largest private-label processor working with the sustainable farming community in Virginia. We are a USDA-inspected plant, specializing in co-packing for local farmers direct marketing meats from their own livestock. JOB DESCRIPTION Perform a wide variety of meat-processing tasks as a member of a processing team

Process whole animals, including beef, pork, lamb and goats

Process animals from whole carcasses to primals to sub-primals to final foodservice cuts Recognize all standard cuts of red meat and fabricate them from whole carcasses Work to exacting standards under the supervision of experienced butcher staff Prepare ground beef and pork sausage as directed Understand differences among species and carcass types Maintain high quality in all situations Process, trim pack, weigh and label meat as directed Participate in daily assembly/disassembly of processing machinery Assist with end of day cleanup of the processing area Perform other duties as assigned by the management team This position does not involve interacting with the public. Job Requirements Some experience with meat cutting or meat processing. Experience working with breaking of whole carcasses a definite plus.

Demonstrate strong problem-solving and communication skills Understand and adhere to food safety (HAACP) plans, sanitary measures (SSOPs), and all other food and industrial safety measures Adhere to company safety policies and procedures Ability to arrive at work on time and work dependably throughout the shift Ability to speak, write, and follow written work assignments in English Skills AND Physical Requirements Manual dexterity and good eye-hand coordination Ability to operate processing room equipment including saws, knives, scales, etc. Physically fit, with the ability to lift/maneuver objects of varying dimensions and weights up to 100 lbs. Ability to stand for long periods of time, with frequent bending, twisting and turning Self-directed, self-motivated, reliable, and willing to learn Friendly and courteous, always maintaining composure when interacting with customers, co-workers, and regulatory personnel Job Type: Full-time Job Type: Full-time Pay: $ $20.00 per hour Expected hours: 36 – 40 per week Benefits: 401(k) matching Paid time off Work Location: In person
