Under the direction of the Assistant Director of Retail & Hospitality Services, the Hospitality Unit Manager manages a multi-faceted service operation for the University Dining Services Department. The Unit Manager directs a seven-day-a-week, academic year high-volume Catering/Specialty, Retail or Board operation and supervises a team of managers, career staff, and student staff. The operating expense budget for a Unit Manager can be up to $5 million. The Hospitality Unit Manager directs multiple program areas including fiscal management, staffing, and accounting for each program, which may include Catering, Retail, conference meal service, collaboration with College programming staff, and other related areas as needed. 35% - Leadership and Accountability: Develops and provides a vision with clear direction to assigned staff; ensures policies and procedures are administered uniformly and align with the University and CHES mission; provide leadership to managers and staff. Responsibilities include managing relationships with customers and collaborating on marketing and merchandising plans to communicate dining programs to targeted clienteles. Work cooperatively with CHES and UCSC to provide excellent customer service to a diverse clientele. Ensure service is delivered in clean, attractive surroundings by a friendly and well-informed staff. Oversee customer service programs and respond quickly to customer requests and queries. Foster an environment that promotes positive working relationships and champions UCSC Principles of Community. 20% - Operations: Plan and oversee all operational aspects of assigned areas including meetings with customers, event sales, menu development, merchandising, service activities, fiscal responsibilities, sanitation and risk management; implement sanitation standards; ensure safe work environment; ensure regulatory compliance (e.g., ADA); implement Injury, Illness Preventive Program (IIPP); ensure HACCP guidelines are followed. Provide oversight to ensure policies and practices support safety, sanitation and food preparation; collaborate with Executive Chef and others to plan menus and events; ensure staff are trained, properly uniformed and scheduled for events; manage purchasing in line with budgets and quality controls; utilize electronic data systems (Event Management, POS, Timekeeping, meal plan databases, etc.). 20% - Human Resources Management: Manage schedules and development of performance standards and training; maintain confidentiality; ensure fair performance standards; support labor contracts; motivate staff; follow AFSCME, CX, and UC policies; implement training programs; complete staff performance appraisals. 15% - Fiscal Management: Oversee multiple budgets, prepare and present reports, forecast budgets, manage costs and optimize productivity. 5% - Maintenance and Repair of Equipment: Maintain safety, sanitation and security; oversee maintenance of equipment, vehicles, and facilities; review invoices and charges for repairs. 5% - Other Duties as Assigned: Support department philosophy, participate in committees and projects, assist with events; may operate campus vehicles; perform other duties as assigned. Required Qualifications
Extensive management experience in Catering, Restaurant, Retail and College Dining including marketing, merchandising, financial and labor management, menu development and costing, storage, quality control, health and safety. Experience delivering high levels of customer service in planning and managing catered events, restaurant operations, and retail or college dining. Experience in event planning, sales, and on-site execution of events with VIP clients. Experience in financial analysis and management toward profit. Experience in menu development, culinary production, safe food handling and quality control in catering/retail environments. Supervisory and leadership skills to manage through others; ability to promote a safe and healthy workplace. Ability to recruit, interview, hire, manage, lead, motivate and supervise a diverse workforce; set and review performance goals; provide training and coaching. Good judgment, diplomatic problem-solving, and ability to work under pressure. Ability to work independently and drive change, develop new menus/programs, and manage projects. Strong math and accounting skills to interpret financial data and provide feedback to management and staff. Excellent interpersonal skills to work with a diverse group. Strong written and verbal communication skills. Computer skills including food service management systems, event planning software, word processing, spreadsheets, databases and presentation software. Previous involvement with NACUFS or similar professional affiliations. Ability to speak Spanish or willingness to learn. Special Conditions of Employment
