About the Role – Executive Sous Chef The goal of the
Executive Sous Chef
is to work directly with and in the absence of the Executive Chef to maintain and improve the culinary and stewarding operations. The ideal Executive Sous Chef will accomplish this by monitoring the daily functions of the culinary and stewarding departments, including providing support and guidance to the culinary and stewarding teams, ending in a positive guest experience. Responsibilities include: Support senior leadership by developing and assuming key management responsibilities Assume the role of liaison between all departments within the culinary division, including stewarding, and all other hotel departments Supervise the performance of the Sous Chefs and provide them counsel as to the preparation and cooking of various food items Supervise the performance of the Stewarding Supervisors and provide them counsel as to the proper execution of the stewarding team’s responsibilities Develop and implement creative menu items that adhere to Hyatt brand standards Ensure proper management of all stewarding inventory and storage Plan, coordinate & implement special events and holiday functions Manage hourly kitchen and stewarding employees through scheduling, payroll, training, coaching, evaluating and hiring Lead and coach the team towards achieving exceptional guest service and employee satisfaction results Monitor food production, ordering, cost, and quality and consistency on a daily basis ensuring financial performance and control Ensure proper safety and sanitation of all kitchen and stewarding facilities and equipment Organize and facilitate departmental meetings, training and goals setting The ideal candidate for the Executive Sous Chef position will: Be creative and forward thinking Be extremely organized and a multitasker Have high energy and be self-motivated Be passionate about food and service Have FUN! Hyatt develops Executive Sous Chefs to progress into the role of Executive Chef through the training of Banquets, Restaurants, Garde Manger and Stewarding. Executive Sous Chefs report directly to the Executive Chef. Wage Information: The salary range for this position is $76,700-$115,300. This is the pay range for this position that Hyatt Regency La Jolla reasonably expects to pay. Decisions regarding individual salaries will be based on a number of factors, such as experience and education. All Candidates must be in possession of identification proving authorization to work in the United States. This Position does not offer sponsorship of Work Visas.
