Job Summary
The Manager, Restaurant will assist the Director of Food & Beverage in planning, organizing, and directing all processes of the outlet to ensure quality food and beverage service, consistent with SOPs and LQA standards. They will aim to achieve maximum revenue and profit aligned with budgeted and forecasted projections.
Key Duties & Responsibilities
- Ensure all colleague activities support the resort’s targets
- Maintain full compliance with all areas of LQA
- Adhere to resort rules and regulations as per Service Standard Policies and Procedures
- Apply creative solutions and propose ideas to grow, develop, and improve the business
- Take full responsibility for the outlet, including financial performance
- Ensure the outlet’s operational budget is in line and costs are controlled to maximize profits
- Assist with the preparation of department budgets and sales & marketing plans
- Achieve sales and profit targets, enhance margins through effective stock management and cost control
- Maintain effective communication between kitchen and service areas
- Work with Culinary on menu engineering
- Manage the level, consistency, and quality of service of all menu items
- Ensure compliance with all food hygiene regulations and procedures
- Monitor food and beverage quality, escalating issues as needed
- Promote upselling techniques to exceed guest expectations and increase revenue
- Provide advice to customers and colleagues on food and beverage items
- Review customer feedback and take appropriate actions
- Conduct team briefings and meetings
- Oversee departmental schedules
- Conduct performance appraisals and identify areas for improvement
- Be familiar with emergency procedures and health and safety requirements
- Ensure colleagues are aware of their duty of care and legislation
- Perform other duties as required by management
Skills, Experience, & Educational Requirements
- At least 2 years of experience in a luxury 5-star hotel
- Passionate about F&B
- Well-groomed, presentable, and inspiring to team members
- Outgoing, confident, and communicative, with a team-oriented attitude
- Flexible and able to work under pressure
- Responsible and self-motivated
- Confident in dealing with colleagues and empowering decision-making
- Excellent English communication skills
- Proficient in Microsoft Office (Word, Excel, PowerPoint, Outlook)
